Golden Mushroom Soup

Melt 1/2 cup butte in a 2 qt
- 1/2 cup butter
- 1/2 cup chopped onion
- 2/3 cup flour
- 6 cups chicken broth
- 1 small bay leaf
- 1/8 tsp. nutmeg
- 1 tbs. salt
- 1/4 cup butter
- 3-4 cups fresh mushrooms, washed and sliced finely
- 2 egg yolks
- 1 1/2 cups whipping cream
Applesauce Spice Bars

Heat over to 350 degrees. Grease oblong 13x9x2" pan
- Brown Butter Glaze:
- 1 cup applesauce
- 2/3 cup packed brown sugar
- 1/4 cup vegetable oil
- 2 eggs
- 2 cups Bisquick baking mix
- 1 tsp. pumpkin pie spice
- 1/2 cup chopped nuts
- 1/4 cup margarine or butter
- 2 cups powdered sugar
- 1 tsp. vanilla
- 1 to 2 tbls. hot water
Hummus

Drain chickpeas, reserving juice
- 1 15 oz. can chick peas (garbonzo beans)
- 2 tbs. lemon juice
- 1/4 tsp. ground cumin
- 1 small garlic clove, minced
- Pinch of cayenne pepper
- 2 tbs. minced parsley
- 1 tbs. minced red onion
Old-Bay Roasted Sweet Potatoes

Preheat oven to 450 degrees
- 3 med. sweet potatoes, 1 1/2 pounds
- extra virgin olive oil
- Old Bay Seasoning
Oatmeal Chip Cake

Grease a 9x13" pan, then flour
- 1 cup of rolled oats
- 1 stick margarine
- 1 3/4 cups of boiling water
- 1 cup of sugar
- 1 cup of brown sugar
- 2 eggs
- 1 3/4 cups of flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 12 oz. pkg. chocolate chips, butterscotch chips or
- Peanut butter
- 1 cup of walnuts
Toffee Nut Bars

Position the rack in the center of the oven
- 2 cups of all purpose flour, spooned in and level
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 //3 cup (1 1/3 sticks) unsalted butter, slightly firm
- 2 cups lightly packed, very fresh light brown sugar
- 2 large eggs
- 2 tsp. pure vanilla extract
- 1 cup plus 2 tbs. medium-fine chipped walnuts divided
- 1 cup semisweet chocolate chips
Plantation Pralines

Combine sugar, cream of tartar, salt and milk
- 3 cups firmly packed light brown sugar
- 1/4 tsp. cream of tartar
- 1/8 tsp. salt
- 1 cup milk
- 2 tbsp. butter
- 1 tsp. vanilla extract
- 2 1/4 cups pecan halves

Adjust oven rack to lower-middly and upper positions and heat oven to 325 degrees
- 3 1/2 cups unbleached all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. salt
- 4 large eggs, 2 egg yolks, and one egg white for brushing
- 2 cups granulated sugar, plus extra for sprinkling
- 2 tsp. vanilla extract
- 2 tbs. almond liqeur, such as Disaronno
- 1 tbs. anise seed
- 4 cups coarsley chopped whole almonds
Ginger Snaps Cookies

Mix togetber the shortening, brown sugar and molasses
- 1/3 cup soft shortening
- 1 cup brown sugar
- 1 1/2 cups dark molasses
- 1/2 cup cold water
- 6 cups flour
- 1 tsp. salt
- 1 tsp. allspice
- 1 tsp. ginger
- 1 tsp. cloves
- 1 tsp. cinnamon
- 2 tsp. baking soda dissolved in 3 Tbs. cold water
Hollendaise Sauce

Beat yolks until thick and yellow colored at high speed
- 2 egg yolks
- 1/2 tsp. salt
- dash of pepper
- 1/4 lb. melted butter
- 1 tbs. lemon juice
