In a large bowl, beat cream cheese and sugar with electric mixer on medium speed until smooth
- 2 pkgs. of 8 oz. cream cheese, softened
- 3/4 cup of sugar
- 1 tbs. of coffee-flavored liqueur or 1 tsp. chocolate
- extract
- 2 tsp. grated lemon peel
- 4 tbs. chocolate cookie crumbs, chocolate-covered
- coffee beans or grated chocolate
- 4 tbs. of graham cracker crumbs

Peach-Apricot Cobbler

Preheat oven to 400 degrees
- Topping:
- 1/2 cup of granulated sugar
- 2 tbs. corn starch
- 1 can (1 pound 13 ounces) sliced peaches, drained,
- juice reserved
- 1 can (10 1/2 ounces) apricot halves, drained, juice
- reserved
- 1 tbs. butter
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 cup all purpose flour
- 1/2 cup granulated sugar
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 2 tbs. butter, softened
- 1 large egg
- Garnish:
- 1 cup of heavy cream
- 2 tbs. honey, at room temperature
- 1/2 tsp. of ground cinnamon
Quick Beer Bread

In a mixing bowl, combine dry ingredients
- 3 cups of biscuit mix
- 1 cup of whole wheat flour
- 2 tbs. sugar
- 2 eggs
- 1 12 oz. can of beer (1 1/2 cups) of your choice
Vienna Bars

Cream butter with 1/2 cup sugar
- 1 cup margarine/butter room temp.
- 1/2 cup sugar
- 1/4 tsp. salt
- 2 large egg yolks
- 2 1/2 cups flour
- 10 oz. red current jelly or red respberry preserves
- 1 cup chocolate chips
- 4 large egg whites
- 2 cups finely chopped walnuts/almonds
- 1 cup sugar
Cherry Meringue Dessert

In a large mixing bowl, beat the egg whites until foamy
- 6 egg whites
- 3/4 tsp. cream of tartar
- 2 tsp. vanilla
- 2 cups of sugar
- 2 cups of crushed saltine crackers (about 60 squares)
- 1/2 cup of chopped pecans
- 1 carton (8 oz.) frozen reduced ffat Cool Whip, thawed
- 1 can (20 oz.) reduced or sugar free cherry pie filling
Applesauce Spice Bread

Combine and mix thoroughly applesauce, granulated sugar, oil, eggs, milk and flour
- Topping:
- 1 1/4 cups of Applesauce
- 1 cup of granulated sugar
- 1/2 cup of oil
- 2 eggs
- 3 tbs. milk
- 2 cups of sifted flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/4 tsp. allspice
- 1/4 tsp. nutmeg
- 1/4 cup of nuts
- 1/2 tsp. cinnamon
- 1/4 cup of brown sugar
Cheesy Corn Bread

Preheat over to 375 degrees
- 1/3 cup of cornmeal, whole grain
- 3 tbs. whole wheat flour
- 1/2 tbs. healthy spread. Smart Balance ets.
- 1/2 tbs. baking powder
- 1/4 tsp. baking soda
- 1/3 cup of buttermilk
- 1/4 cup of liquid eggs. Better'n Eggs
- 3 tbs. fat free milk
- 3 1/4 oz. low-sodium, low-fat cheese
- Vegetable oil cooking spray
San Francisco Chops

Trim pork chops of fat. Heat oil in skillet
- Sauce:
- 4 pork chops, 1/2 to 3/4 in. thick (about 1 1/2 lbs.)
- 1 tbs. olive oil
- 1 clove garlic, minced
- 2 tsp. olive oil
- 4 tbs. dry sherry or broth
- 4 tbs. soy sauce
- 2 tbs. brown sugar
- 1/2 tsp. crushed red pepper
- 2 tsp. cornstarch
- 2 tbs. water
Marinara Sauce

Pour tomatoes and juice into strainer set over large bowl
- 2 28 oz. cans whole totamoes packed in juice
- 2 tbs. olive oil
- 1 med. onion, chopped fine (1 cup)
- 2 med. garlic cloves, minced or processed through garlic press (2 tbs.)
- 1/2 tsp. dried oregano
- 1/3 cup dry red wine, such as Chianti or Merlot
- 3 tbs. chopped fresh basil leaves
- 1 tbs. extra-virgin olive oil
- table salt or kosher salt and ground black pepper
- 1-2 tsp. sugar, as needed
