Honey Cake

Preheat oven to 350 degrees
- 1/2 cup of egg substitute
- 1 egg
- 2 tbs. sugar
- 1/4 cup of margarine, softened
- 2 1/2 cups of flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1/4 cup of honey
- 1 cup of cold coffee
- 1 small ripe banana, mashed
Fudgy Chocolate Cake

Finely grate white chocolate onto a plate using a vegetable peeler
- 6 oz. white chocolate, for garnish
- 1 cup (2 sticks) unsalted butter
- 1 cup plus 3 tbs. granulated sugar
- 1 1/2 cups of all-purpose flour
- 1/2 cup plus 3 tbs. unsweetened cocoa powder
- 1 tbs. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 4 large eggs
- 3/4 cup of very hot water
- 1/2 pint heavy cream
- 10 1/2 oz. semisweet chocolate
Sweet Potato and Apple Gratin

Place rack in the lower third of the oven and preheat to 450 degrees
- 3 Tbs. butter, divided
- 1 cup, fresh bread crumbs
- 4 cups, thinly sliced yellow onions ( about 3 med.)
- 2 Tbs. chopped fresh sage leaves or 2 tsp. dried sage
- Salt and freshsly ground black pepper
- 2 lbs. sweet potatoes, peeled and thinly sliced, about 4 small potatoes
- 4 cups, peeled and sliced apples, such as Honeycrisp, about 3 large apples.
Holiday Gift Cakes

Heat oven to 350 degrees. Blend softened cream cheese, margarine, sugar and vanilla
- 1 8 oz. pkg. of cream cheese
- 1 cup of margarine
- 1 1/2 cups of sugar
- 1 1/2 tsp. vanilla
- 4 eggs
- 2 1/4 cups of sifted flour
- 1 1/2 tsp. baking powder
- 3/4 cup mangarine oranges (8 oz. jar)
- 1/2 cup of chopped pecans
- 3/4 cup of maraschino cherries (8 oz. jar)
Spaghetti Sauce

Simmer all ingredients slowly for 2 to 4 hours
- 1 pkg. of ground beef
- 1 chopped onion
- 2 cans of tomato sauce
- 1 sm. can of chopped mushrooms
- 2 chicken bouilion cubes
- 1 tsp. sugar
- 1 can tomato paste
- salt to taste, pepper, garlic powder generous parsley flakes
- med. pinch of Italian seasoning
- dash of Oregano
- sm. pinch of sweet Basil
Almond Cookies

Pre-heat oven to 350 degrees
- 1/2 cup almonds
- 1/2 cup sugar
- 4 oz. unsalted butter
- 1 tsp. vanilla
- 1/2 lemon peel
- 1 egg white
- 2/3 cup whole wheat flour
- 1/4 tsp. ground ginger
Hot Fudge Walnut Pudding Cake

Preheat oven to 350 degrees
- 1 1/4 cups of granulate sugar, divided
- 1 cup of all-purpose flour
- 7 tbs. Hershey's cocoa, divided
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup of milk
- 1/3 cup of butter, melted
- 1 1/2 tsp. vanilla extract
- 1 cup of Hershey's semi-sweet chocolate chipa
- 1/2 cup of packed light brown sugar
- 1 1/4 cups of hot water
- Sweetened whipped cream
- Chopped walnuts
Smothered Chicken with Mushrooms

Sprinkle chicken with salt and pepper
- 1 chicken (3 1/2 lbs.) split
- 4 tbs. butter
- 1/2 lb. fresh, sliced mushrooms
- 16 small onions, about 1 lb., peeled and left whole
- 1 bay leaf
- 1/4 tsp. dried thyme
- 1/2 cup dry, white wine
- 1/2 cup fresh chicken broth
- 2 tbs. finely chopped parsley
Roquefort Ball

Mix all ingredients together (no nuts) and roll into a ball
- 1 lb. Roquefort or Blue cheese
- 2 pkg. (3 oz. ea.) cream cheese, beaten
- 1 tbs. minced green onion
- 1 tsp. worcestershire sauce
- 1 tbs. paprika
- 2 tbs. brandy
- 1 cup chopped nuts
Peanut Butter Balls

Mix butter, peanut butter and sugar well in large bowl
- 1/2 lb. butter (not margarine)
- 1 1/2 lgs. powdered sugar
- 1 1/2 blocks paraffin
- 1 lb. creamy peanut butter
- 1 large bg. chocolate chips
