Cajun Shrimp and Rice

Heat butter, olive oil and garlic in a large skillet over medium, 1 minute
- 1 tbsp butter
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tsp cajun seasoning
- 1 lb large shrimp, peeled and deveined
- salt and pepper
- 2 bunches scallions, chopped
- 3 cups cooked white rice
- 3 tbsp parsley, chopped
Vanilla Chai Cupcakes

Beat flours, sugar, baking powder, salt, and chai until blended in bowl of stand mixer
- 1.5 cups flour
- 1.5 cups cake flour
- 2 cups sugar
- 1 tbsp baking powder
- 3/4 tsp salt
- 1 tbsp chai tea (2 packets)
- 2 sticks butter, room temp
- 4 eggs
- 1 cup milk or chai tea concentrate
- 1 tsp vanilla
Penne frittata with basil and ricotta
