Cajun Shrimp and Rice

Ingredients

  • 1 tbsp butter
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp cajun seasoning
  • 1 lb large shrimp, peeled and deveined
  • salt and pepper
  • 2 bunches scallions, chopped
  • 3 cups cooked white rice
  • 3 tbsp parsley, chopped

Preparation

Step 1

Heat butter, olive oil and garlic in a large skillet over medium, 1 minute. Add cajun seasoning and shrimp, cook while stirring, until shrimp curl, 1-2 minutes. Season with salt and pepper.
Add scallions to skillet, cook about 1 minute while stirring. Add rice and 1/4 cup water, continue to cook until rice is warmed and shrimp are opaque and pink, 3 more minutes. Stir in parsley and serve.
