Potatoes - Grilled Potato Fans

With a sharp knife, make cuts 1/2 in
- 6 med. baking potatoes
- 2 med. onions, halved and thinly sliced
- 6 Tbsp. butter, cubed
- 1/4 cup finely chopped celery
- 1 tea. salt
- 1 tea. dried oregano
- 1/4 tea.garlic powder
- 1/4 tea. pepper
Bean - Corn Relish and Bean Salad

In a large bowl, combine all ingredients
- 1 can (15 oz) black beans, rinsed and drained
- 1 jar (13 oz) corn relish
- 1/2 cup canned kidney beans, rinsed and drained
- 1/2 cup quartered cherry tomatoes
- 1/2 cup chopped celery
- 1/4 cup chopped sweet orange pepper
- 1/4 cup sliced pimiento-stuffed olives
- 2 tea. minced fresh parsley
Mincemeat Squares

In a large bow,combine the flour, oats, brown sugar, cinnamon, baking soda and salt
- 1 jar mincemeat
- CRUST
- 1 1/2 cups flour
- 1 1/2 cups old-fashioned oats
- 1 cup packed brown sugar
- 1 tea. cinnamon
- 1/2 tea. baking soda
- dash salt
- 1 cup cold butter, cubed
- 3/4 cup coarsely chopped walnuts
- Vanilla ice cream, optional
Pickles - Sweet Hot Dill Pickles (from store-bought dills)

Remove 2/3's of the pickles from the jar
- 1 gal. jar dill pickle slices, drained
- 5 lb. sugar
- 4 oz. Tabasco
Enchilada Pasta Soup

In a 4 qt. Dutch oven or saucepan, mix broth, corn, enchilada sauce and chiles
- 5 1/4 cups chicken broth
- 2 cans (14.75 oz) cream style sweet corn
- 2 cans (10 oz each) enchilada sauce
- 1 can (4.5 oz) chopped green chiles
- 1 can (10 oz) chunk chicken
- 5 oz. uncooked vermicelli, broken into pieces
- 1 1/2 teal cumin
- 1/2 ta. salt
- 1/2 tea. onion powder
- 1/2 tea. dried oregano leaves
- Garnish: shredded cheese, chopped onion
Stale Bread - Chocolate Bread Parfaits

Melt chocolate. In a heatproof bowl, mix espresso with sugar and rum; whisk in chocolate
- 8 oz. finely chopped bittersweet chocolate
- 1/2 cup brewed espresso
- 2 Tbsp. sugar
- 2 Tbsp. dark rum
- 6 cups crustless, 1" bread cubes
- 1 1/2 cups heavy cream (or CoolWhip)
- 1/2 cup toasted slivered almonds
Upside Down Salsa Cornbread

In a deep 8" cast iron skillet with 1 Tbsp
- 1 lb. ground beef
- 2 tea. salt
- 1/2 tea. garlic poweder
- 1 tea. chili powder
- 1 medium, onion, chopped
- 1 medium bell pepper, seeded and cut into rings
- 2 cups Martha White Buttermilk Self-Rising Corn Meal or similar self rising cornmeal product
- 1 Tbsp. sugar
- 1 16 oz. jar thick and chunky salsa
- 1 1/4 cups milk
- 1 egg
- 1 cup shredded cheddar cheese
- 4 Tbsp. vegetable oil
Rhubarb Peach Jam

- 2 quarts sliced fresh or frozen rhubarb (1" pieces)
- 4 cups sugar
- 1 can (21 oz) peach pie filling
- 1 pkg. (3 oz) orange jello
Orzo Pilaf

In a medium saucepan, melt butter over medium high heat
- 2 Tbsp. butter
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 (16 oz) box orzo
- 1 (32 oz) carton chicken broth
- 2 fresh zucchini, chopped
- 2 fresh yellow squash, chopped
- 1 cup shredded Parmesan cheese
- 1 Tbsp. chopped fresh parsley

- 2 3/4 cups water
- 3 cloves garlic, mined
