Spinach Squares
By á-47
Preheat oven to 350 degrees
- 2 Tbsp. butter
- 1 cup chopped onion
- \two 10 oz. pkgs. frozen chopped spinach, thawed and squeezed dry
- 6 eggs
- 1 envelope Knorr cream of Spinach Soup Mix
- 2 cups dry breadcrumbs
- 1 cups freshly grated Parmesan cheese
- 1/4 tea. freshly grated nutmeg
Asian Noodle Salad

Whisk all ingredients (except noodles and green onions) together in a bowl
- 16 ounces spaghetti, or Soba or whole wheat
- 1/4 cups Soy Sauce
- 2 Tablespoons Sugar, or sugar substitute
- 4 cloves Garlic, Minced, I grate the garlic for a smoother taste
- 1 teaspoon grated fresh ginger
- 2 Tablespoons Rice Vinegar
- 3 Tablespoons Pure Sesame Oil
- 1/2 teaspoon Hot Chili Oil, I use Siracha, 1 tablespoon
- 2 Tablespoons Canola Oil
- 3 Tablespoons Hot Water
- 4 whole Green Onions, Sliced Thin
Pork-Bean Chili with Corn Dumplings

Put the beans in a Dutch oven or large pot and add enough water to cover
- For the chili:
- 1 lb. dried black beans, picked over (about 2 cups)
- 1 tea. dried thyme
- 3 bay leaves
- 10 cloves garlic (6 smashed; 4 minced)
- 2 Tbsp. vegetable oil
- 1 large onion, diced
- 3 Tbsp. chili powder
- 1/4 cup ancho chile powder
- 1 Tbsp. paprika
- 1 Tbsp. dried oregano
- 1 Tbsp. ground cumin
- 1/2 tea. ground cloves
- 2 145-oz. cans Mexican-style diced tomatoes with green chiles
- 3 lb. boneless pork shoulder (Boston butt), trimmed and cut into 3/4" pieces
- salt
- 1 bunch cilantro, leaves only
- juice of 2 limes, plus lime wedges for serving
- shredded cheddar cheese, for topping
- sour cream, for serving (optional)
- For the dumplings:
- 2 cups masa harina (instant corn flour)
- 2 Tbsp. butter, melted
- salt
Spanish-Style Chicken with chorizo

Serve with rice or crusty bread to soak up the juices
- 2 Tbsp. olive oil
- 8 boneless, skinless chicken thighs, halved (or a mix of thighs and breasts)
- 1 red onion, thinly sliced
- 1 red bell pepper, seeded and sliced
- 1 yellow bell pepper, seeded and sliced
- 1 garlic clove, crushed
- 1 can (19 oz) chopped tomatoes (with juice)
- 2/3 cup dry white wine
- 1 Tbsp. paprika
- 3 oz. chorizo sausage, cut into thick slices
- 2 Tbsp. pitted black olives (preferably oil cured), halved
- salt and pepper
- parsley, rinsed, dried and chopped
Zucchini - Fried

Whisk flour, cornstarch, salt, water and egg in a bowl
- 1/2 cup flour
- 1/2 cup cornstarch
- 1/2 tea. salt
- 1 cup water
- 1 egg
- 2 cups breadcrumbs
- 1/2 cup grated percorino cheese
- 2 large zucchini sliced 1/4" thick
- vegetable oil
Sweet Potatoes - w/ honey and cayenne

Bring large pan of slightly salted water to a boil
- 3 lb. sweet potatoes, peeled and cut into 1 1/2" pieces
- 3 Tbsp. butter
- 1/4 cup honey
- 1/4 tea. cinnamon
- 1/4 tea. cayenne
- 3/4 tea. salt
- 1/4 tea. pepper
- 1/2 cup toasted pecans
Plank-Grilled Salmon

Soak plank in apple juice fro 2-4 hours
- 1 alder grilling plank
- 2 cups apple juice
- 1/2 cup sliced green onion
- 1/4 cup mirin (a low-alcohol, sweet, golden colored wine)
- 1/4 cup soy sauce
- 2 Tbsp. minced fresh ginger
- 2 Tbsp. chopped fresh cilantro
- 1 Tbsp. brown sugar
- 1 (2 lb) skinless salmon fillet
- 1 lime, thinly sliced
Corn Muffins with green chile

In a large bowl, combine corn bread and cake mixes
- 1 pkg. (8 1/2 oz) corn bread/muffin mix
- 1 pkg. (9 oz) yellow cake mix
- 2 eggs
- 1/2 cup 2% milk
- 1/3 cup water
- 2 Tbsp. canola oil
- 1 can (4 oz) chopped green chilies, drained
- 1 cup (4 oz) shredded cheddar cheese, divided
Potatoes - Papas con Chile Abuelo's

1.Wash and scrub potatoes until clean 2
- 3 lbs. red potatoes
- 3 oz cream cheese – cut into 2" squares
- 1/2 cup heavy cream
- 10 oz Velveeta – cut into 2 " squares
- 1/2 TBS salt
- 3/4 tsp granulated garlic
- 1/4 cup sour cream
- 1/2 cup diced red bell peppers
- 1/2 cup diced green bell peppers
- 2 cans chopped green chiles
- 1/2 cup chopped green onion tops
- 2 TBS of finely chopped jalapeño – seeds removed
Turkey - Chorizo Stuffed Turkey Breast

Cover turkey with plastic wrap; flatten to1/2" thickness
- 1 boneless skinless turkey breast half (2 lb)
- 1/2 lb. uncooked chorizo, crumbled
- 2 Tbsp. olive oil
- 1/2 tea. salt
- 1/2 tea. pepper
