  • 2 cups dry breadcrumbs
  • 1 cups freshly grated Parmesan cheese
  • 1/4 tea. freshly grated nutmeg

Whisk all ingredients (except noodles and green onions) together in a bowl

  • 16 ounces spaghetti, or Soba or whole wheat
  • 1/4 cups Soy Sauce
  • 2 Tablespoons Sugar, or sugar substitute
  • 4 cloves Garlic, Minced, I grate the garlic for a smoother taste
  • 1 teaspoon grated fresh ginger
  • 2 Tablespoons Rice Vinegar
  • 3 Tablespoons Pure Sesame Oil
  • 1/2 teaspoon Hot Chili Oil, I use Siracha, 1 tablespoon
  • 2 Tablespoons Canola Oil
  • 3 Tablespoons Hot Water
  • 4 whole Green Onions, Sliced Thin

Put the beans in a Dutch oven or large pot and add enough water to cover

  • For the chili:
  • 1 lb. dried black beans, picked over (about 2 cups)
  • 1 tea. dried thyme
  • 3 bay leaves
  • 10 cloves garlic (6 smashed; 4 minced)
  • 2 Tbsp. vegetable oil
  • 1 large onion, diced
  • 3 Tbsp. chili powder
  • 1/4 cup ancho chile powder
  • 1 Tbsp. paprika
  • 1 Tbsp. dried oregano
  • 1 Tbsp. ground cumin
  • 1/2 tea. ground cloves
  • 2 145-oz. cans Mexican-style diced tomatoes with green chiles
  • 3 lb. boneless pork shoulder (Boston butt), trimmed and cut into 3/4" pieces
  • salt
  • 1 bunch cilantro, leaves only
  • juice of 2 limes, plus lime wedges for serving
  • shredded cheddar cheese, for topping
  • sour cream, for serving (optional)
  • For the dumplings:
  • 2 cups masa harina (instant corn flour)
  • 2 Tbsp. butter, melted
  • salt
