Place asparagus i a 15x10x1" baking pan
- 1 lb. fresh asparagus, trimmed
- 3 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
- 1/2 tea. salt
- 1/4 tea. pepper
Rhubarb Buttermilk Muffins

Mix first ten ingredients in order given
- 3/4 cup brown sugar
- 1/2 cup oil
- 1 egg
- 1/2 cup buttermilk
- 1/2 tea. salt
- 1 tea. vanilla
- 1 1/2 cup flour
- 1/2 tea. soda
- 1/2 cup nuts
- 1 cup finely chopped rhubarb
- 1/4 cup brown sugar
- 1/2 tea. cinnamon
- 1/4 cup nuts
Dip - Tomatillo Sauce (dip/dressing/spread)

- 1 cup mayonnaise
- 1/2 cup 2% milk
- 2 tomatillos, husks removed
- 3/4 cup fresh cilantro leaves
- 1 jalapeno pepper, seeded and cut into chunks
- 1 envelope ranch salad dressing mix
- 1 Tbsp. lime juice
- 1 garlic clove, peeled
- 1/8 tea. cayenne pepper

- 1 1/2 cups flour
- 1 tea. salt
- 1 tea. baking powder
- 1/3 cup plus 1 Tbsp. melted butter, divided
- 1 cup sugar
- 4 Tbsp. lemon juice, divided
- 2 beaten eggs
- 1/2 cup milk
- 2 Tbsp. grated lemon zest
- 1 1/2 cups fresh or frozen blueberries, plus additional for garnish
- 1 cup powdered sugar, sifted
Apple Skillet Cake

Bake in a 9" or 10"oven-proof skillet or cake pan
- 3/4 cup flour
- 1 cup sugar, divided
- 1 tea. baking powder
- 1 tea. cinnamon
- 1/4 tea. salt
- 1/4 tea. ground cloves
- 3 medium baking apples, cored, sliced 1/4" thick
- 1 Tbsp. lemon juice
- 1/3 cup butter,
- 3/4 cup cold coffee or milk
- 1 egg, beaten

- 2 lb. salmon fillet, skinned, pin bones removed and salmon cut to fit in slow cooker
- 4 cups fresh orange juice
- 3 cups chardonnay
- 1 bulb fennel, sliced
- 1 red onion, sliced
- 2 tea. capers
- 1 tea. kosker salt
- 2 oranges, thinly sliced
