Potatoes - Cheesey Potatoes (w/ velveeta and bacon)

Preheat oven to 400 degrees
- 4 medium potatoes, unpeeled, quartered and cut into 1/2" chunks (about 4 cups)
- 1/2 lb. Velveeta, cubed
- 1/2 medium onion, chopped (about 1/2 cup)
- 1/4 cup mayonnaise
- 4 slices bacon, cooked, drained and crumbled (about 1/4 cup)
Galette - Mini Caramel Apple Crostatas

Heat oven to 425°F. Unroll crust on work surface
- 1 refrigerated pie crust (from 15-oz box), softened as directed on box
- 1 large baking apple, peeled, cored and thinly sliced (about 2 cups)
- 2 Tablespoons sugar
- 1/4 teaspoon ground cinnamon
- 8 teaspoons caramel flavored topping
Raspberry Mint

Makes 8 half pints Good on cream cheese and crackers
- 8 cups raspberries
- 6 1/2 cups sugar
- 1/2 tea. butter
- 2 pouches (3 oz. each) liquid fruit pectin
- 1 cup minced fresh mint
Cold Noodles with Peanut or Sesame Sauce

To make this more substantial add a few slices of grilled or roasted chicken
- 12 oz. fresh Chinese egg noodles or long pasta, like linguine
- 2 Tbsp. dark sesame oil
- 1/2 cup peanut butter
- 2 Tbsp. sugar
- 3 Tbsp. soy sauce
- 1 tea. minced fresh ginger (optional)
- 1 Tbsp. rice or white wine or other vinegar
- Hot sesame oil or Tabasco sauce to taste
- 1/2 tea. pepper, or more to taste
- at least 1/2 cup chopped green onions for garnish
Beets - Spiced Pickled Beets (makes 4 pints)

Cook bets for 25-35 minutes or until tender
- 3 lbs. small fresh beets
- 2 cups sugar
- 2 cups water
- 2 cups cider vinegar
- 2 cinnamon sticks (3")
- 1 tea. whole cloves
- 1 tsp. whole allspice
New Mexican Chicken Soup

Put the chicken, mushrooms, tequila, 2 cups water, and red chile flakes in a saucepan and cook for 30 minutes
- 1/2 lb. dice chicken breasts, boneless, skinless
- 3-4 green onions, chopped
- 1 cup mushrooms, sliced
- 1/4 cup tequila
- 4 cups chicken broth
- 1/2 tea. dried red chile flakes
- 4 cups water
- 1/2 head cabbage, shredded
- 2 carrots, diced
- 4 potatoes, peeled, diced
- 1 Tbsp. fresh parsley
- 1/2 tea, pepper
- 1/4 tea. ground ginger
Turkey - Southwest Turkey Soup

Yield: 7 servings
- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 1 can (14.5 oz) chicken broth
- 2-3 Tbsp. diced jalapeno pepper
- 3 tea. cumin
- 1 1/2 tea. chili powder
- 1/4 tea. salt
- 1/4 tea. cayenne pepper
- 3 cups cubed cooked turkey
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) diced tomatoes and green chilies, undrained
- 1 1/2 cups frozen corn
Potato, Cheese & Sausage Casserole (individual portions)

1 Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts
- 3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 lb Velveeta cheese, diced
- 1/2 cup sharp cheddar cheese, shredded
- 1 lb skinless smoked sausage (Eckrich is my favorite brand)
- 1/8 teaspoon paprika
Chicken Breasts - with Catalina Dressing

Preheat oven to 325 degrees
- 8 chicken breasts, skinless
- 1 8 oz. bottle Catalina dressing
- 1 envelope dry onion soup mix
- 1 (8 oz) jar apricot preserves
- 1 Tbsp. lime juice
- cooked rice
Santa Fe Apple Pumpkin Soup

Combine nectar, broth and cream in medium saucepan
- 1 can (11.5 oz) apple nectar
- 1 can (14.5 oz) chicken broth
- 1 cup (8 oz) heavy whipping cream
- 1 can (15 oz) Libby's pure pumpkin
- 1/4 cup firmly packed dark brown sugar
- 1 tea. cumin
- 1/2 tea. chili powder
- 1/2 ta. ground coriander
- 1/8 tea. nutmeg
- 1/2 cup shredded cheddar cheese
