aDressing: Hoisin-Sesame Vinaigrette

Mix all together
- 2 Tbsp. EVOO
- 1 Tbsp. rice vinegar
- 2 tea. finely chopped green onions
- 2 tea. fresh lemon juice
- 2 tea. hoisin sauce
- 1 tea. sesame oil
- 1/2 tea. minced garlic
- 1/4 tea. white pepper
- 1/8 tea. salt
Potatoes - Cheesy Scalloped Potatoes

Heat oven to 350 degrees. Coat a shallow 2 qt
- 2 lb., baking potatoes
- 1 1/2 cups (6 oz) shredded sharp cheddar
- 1 jar 915-16 oz0 Alfredo sauce
- 1/3 cup chopped chives or green onions
- 1/2 cup milk
- 1/8 tea. cayenne pepper
- 1/8 tea. nutmeg
Rum Creme (like kahlua)

Whisk the eggs and lime zest in a large bowl until well combined and smooth, about 30 seconds
- 4 eggs
- finely grated zest of 1 lime
- 1 14-oz. can sweetened condensed milk
- 3/4 cup best-quality dark rum
- 1/4 tea. nutmeg plus more for topping
- 1 tea. Angostura bitters
Ginger Cake Squares

Combine 1 Tbsp. butter and corn syrup in small saucepan
- 1/2 cup plus 2 Tbsp. butter
- 1/2 cup corn syrup
- 1/2 cup pecan halves or pieces
- 1 large pear or apple, cored and chopped
- 1/2 cup sugar
- 3/4 cup molasses
- 2 eggs
- 2 cups flour
- 1/2 tea. baking powder
- 1/2 tea. baking soda
- 1/2 tea. ground ginger
- 1/2 tea. cinnamon
- 1/4 tea. salt
- 1/4 tea. ground cloves
- 1/2 cup buttermilk
Cheesy Ham and Noodles

Variation: substitute whipping cream and Gruyere for the half-n-half and Swiss)
- 12 oz. uncooked linguine
- 3 cups half-n-half
- 2 cups (8 oz) shredded Swiss cheese
- 1 cup frozen peas
- 1 Tbsp. Dijon mustard
- 1 (12 oz) ham steak, chopped
- 1 (10 oz) pkg. refrigerated Alfredo sauce
Apricot Habanero Jam

Makes 11 half pints
- 3 1/2 lbs. fresh apricots
- 6 Tbsp. bottled lemon juice
- 2-45 habanero peppers, seeded
- 1 pkg. (1 3/4 oz) powdered fruit pectin
- 7 cups sugar
Chorizo, Potato and Egg Tacos

Heat broiler, with rack in top position
- 1 large poblano chile
- 1 medium russet potato (1/2 lb) peeled and cut into 3/4" cubes
- 1/2 lb. chorizo
- 4 large eggs, lightly beaten
- 8 small flour tortillas, warmed and lightly toasted
- Salas Picante (see recipe in condiments) for serving
Chicken Cheddar Pinwheels (w/ flour tortillas)

In a small bowl, stir together mayonnaise and next 4 ingredients
- 1/4 cup mayonnaise
- 1/4 cup dill pickle relish
- 2 Tbsp. sour cream
- 1/2 tea. salt
- 1/4 tea. pepper
- 3 (12") flour tortilla wraps
- 1/2 lb. thinly sliced deli chicken
- 1 (8 oz) pkg. sliced cheddar cheese
- 3 large leaves romaine lettuce, ribs removed
Raspberry Oat Yogurt Muffins

In a bowl, combine oats, brown sugar, yogurt, oil and egg
- 1 cup quick-cooking oats, uncooked
- 1/2 cup brown sugar, packed
- 1 cup vanilla or plain yogurt
- 1/2 cup oil
- 1 egg, beaten
- 1 cup flour
- 1 tea. salt
- 1 tea. baking powder
- 1/2 tea. baking soda
- 1 cup raspberries or other fruit, finely chopped
Chicken - Asian Chicken Salad Lettuce Cups

Remove and discard chicken skin and pull meat off bones
- 1 deli rotisserie chicken
- 1 cup shredded carrots
- 1 can (8 oz) sliced water chestnuts, halved
- 6 green onions, diagonally sliced
- 1/4 cup plain Greek yogurt
- 1/4 cup Asian sesame salad dressing
- 1 head boston lettuce, separated into leaves
- hot pepper flakes (optional)
