Oatmeal Cake

Preheat oven to 350 degrees
- CAKE
- 1 cup quick-cooking or regular oats
- 1 1/4 cups boiling water
- 1/2 cup butter, softened (1 stick)
- 1 cup sugar
- 1 cup packed light brown sugar
- 2 eggs
- 1 tea. vanilla
- 1 1/2 cups flour
- 1 tea. baking soda
- 1/2 tea. salt
- 1 tea. cinnamon
- TOPPING
- 1/4 cup butter, softened
- 1/4 cup heavy cream
- 1 cup packed light brown sugar
- 1 cup shredded, sweetened coconut
Coffee Toffee Cheesecake

Place a greased 9" springform pan on a double thickness of foil (about 18" square)
- 2 1/2 cups chocolate wafer crumbs
- 1/2 cup butter, melted
- 2 Tbsp. sugar
- FILLING
- 1 cup (6 oz) semisweet chocolate chips
- 1/4 cup heavy whipping cream
- 4 tea. instant coffee granules
- 3 pkg. (8 oz each) cream cheese, softened
- 3 1/3 cups sugar
- 3 1/2 cups (12 oz) sour cream
- 1 Tbsp. vanilla
- 1/8 tea. salt
- 3 eggs, lightly beaten
- 4 Heath candy bars (1/4 oz each), chopped
- 1 dark chocolate candy bar (1/45 oz)
aDressing: Sweet Asian Dressing

Whisk all ingredients together
- 2 Tbsp. honey
- 2 Tbsp. soy sauce
- 2 Tbsp. balsamic vinegar
- 2 tea. roasted sesame oil
- 1 garlic clove, minced
- 1/4 tea. finely chopped fresh ginger
- 1/4 tea. hot pepper sauce

Depending on your preference you can use another cut of pork or even all chicken thighs
- Cooking spray
- 1 pork tenderloin, trimmed and cut into 2" pieces
- 1/3 cup soy sauce
- 1/4 cup water
- 1/2 tea. black peppercorns
- 1 1/2 lb. skinless, boneless chicken thighs, cut into 2" pieces
- 1 (14 oz) can chicken brown
- 1 (12 oz) bottle rice vinegar
- 8 garlic cloves, crushed
- 1 bay leaf

In a medium bowl, combine the flour, baking powder, baking soda, and salt, mixing well
- 1 cup flour
- 1 tea. baking powder
- 1/2 tea. baking soda
- 1/2 tea. salt
- 1 egg
- 3 Tbsp. oil
- 1 Tbsp. molasses
- 12 oz. beer
Chicken Basting Sauce

In a bowl, combine and whisk all of the ingredients together
- 1 1/2 cups beer
- 1/4 cup orange marmalade
- 1 Tbsp. dry mustard
- 1 Tbsp. peeling and minced fresh ginger
- 2 cloves garlic, minced
- 1/4 tea. salt
- 1 tea. honey
Pedehe (Lynda's Ukranian Peorgies)

This recipe made 115. Probably need to cut in half
- 5 # potatoes, cooked and mashed
- Save all the cooking water
- 1/2 # bacon, diced
- 1 medium onion, fine diced
- salt and pepper to taste (start with 2 T salt, 1 T pepper)
- 1 large and 1 small cottage cheese
- 2 eggs
- 1/4 cup olive oil
- 1/2 cup water
- enough flour to make dough
Puff Pastry-Wrapped Andouille Sausage w/ Pepperjack Cheese

- 1/2 pkg. Pepperidge Farms Puff Pastry sheets, thawed (1 sheet)
- 1 cup grated Pepperjack cheese
- 3 Tbsp. finely chopped scallions
- 3 fully cooked Andouille sausages, cut in half lengthwise
- 1 egg, beaten
- 2 Tbsp. water
Spicy Mixed Nut brittle

- 1 cup light corn syrup
- 1/2 tea. salt
- 3 cups mixed nuts
- 2 Tbsp. butter
- 2 tea. baking soda
- 2 tea. vanilla
- 1 tea. tabasco
- 1 tea. black pepper
- 1/4 tea. crushed red-pepper flakes
