Lasagna Roll-ups with Spinach & Cheese

Preheat oven to 350 degrees
- 1 - 15 oz. container ricotta cheese
- 1 - 10 oz. pkg. frozen chopped spinach,m thawed and well drained
- 1 cup (4 oz) shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 egg, slightly beaten
- 9 lasagna noodles, cooked according to package directions
- 1 26-oz. jar Classico Tomato and Basil Pasta Sauce
- or use a spicier sauce
- add ground beef

Southwestern Turkey Soup

In a large saucepan, saute onion in oil until tender
- 1 medium onion, chopped
- 1 Tbsp. olive oil
- 1 can (14.5 oz) chicken broth
- 2-3 Tbsp. diced jalapeno pepper
- 3 tea. ground cumin
- 1 1/2 tea. chili powder
- 1/4 tea. salt
- 1/4 tea. cayenne pepper
- 3 cups cubed cooked turkey
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) diced tomatoes and green chilies, undrained
- 1 1/2 cups frozen corn
- Optional toppings: sour cream, shredded cheddar cheese and sliced black olives
No Bean Chili

Ingredients can be combined the night before and dumped into the slow cooker in the morning
- 1 1/2 lb. lean ground beef (90% lean)
- 1 can (14.5 oz) stewed tomatoes, undrained
- 1 can (8 oz) tomato sauce
- 1 small onion, chopped
- 1 small green pepper, chopped
- 1 can (4 oz) chopped green chilies
- 1/2 cup minced fresh parsley
- 1 Tbsp. chili powder
- 1 garlic clove, minced
- 1 1/4 tea. salt
- 1/2 tea. paprika
- 1/4 tea. pepper
- Hot cooked rice or pasta
- Optional toppings: shredded cheese, sour cream and sliced green onions
Salsa - Chunky Tomatillo

Yield: 3 pints
- 4 pounds tomatillos, husked, washed, and finely chopped
- 1 cup chopped onion (about 1 medium)
- 3-4 jalapenos, minced (seeds removed for a milder salsa)
- 8 garlic cloves, minced
- 1 Tbsp. ground cumin
- 2 tea. sea salt
- 1/2 cup bottle lime juice
- 1/4 cup minced fresh cilantro
Cheese and Bacon Biscuits

Preheat oven to temperature called for in the package directions
- 1 Tbsp. olive oil
- 2 slices bacon, finely chopped
- 1 box of biscuit mix, such as Jiffy (or mix for 8 drop biscuits)
- 1/8 tea. nutmeg
- 1 cup shredded cheddar cheese
Salted Caramel Spritz Cookies

Heat oven to 350 degrees. Combine caramels and half-and-half in a small saucepan
- 3/4 Kraft soft caramels, unwrapped (18 caramels)
- 1/4 cup half-and-half
- 1 cup (2 sticks) butter, softened
- 1/2 cup packed brown sugar
- 1 egg
- 3/4 tea. sea salt
- 3 cups flour
- cookie pres fitted with snowflake disc
- GLAZE
- 3/4 cup packed brown sugar
- 3 Tbsp. half-and-half
- sea salt, for sprinkling
Quick Marinated Chicken

In small bowl, combine mustard, lemon juice, Worcestershire, tarragon, and pepper; mix well
- 1/4 cup Dijon mustard
- 2 Tbsp. lemon juice
- 1 1/2 tea. Worcestershire sauce
- 1/2 tea. dried tarragon
- 1/4 tea. pepper
- 4 boneless, skinless chicken breast halves

- 4 fresh or canned tomatillos, chopped
- 3/4 cup finely chopped yellow cherry tomatoes
- 2 roma tomatoes, finely chopped (about 2/3 cup)
- 1/4 cup finely chopped red onion
- 1 fresh serrano pepper, see3ded and finely chopped
- 1 1/2 tea. snipped fresh cilantro
- 1 tea. lime juice
Mustard Sauce/Dip

Mix all together
- 1/2 cup mustard
- 1 Tbsp. BBQ sauce
- 2 Tbsp. stout beer (or tequila, mayonnaise or maple syrup)
