In a bowl, combine the pudding mix, milk and Amaretto and whisk
- 1 (3.4 oz) pkg. instant vanilla pudding mix
- 1 3/4 cups milk
- 1/4 cup Amaretto
- 1 cup strong coffee, warmed
- 1 Tbsp. sugar
- 1/4 cup Kahlua
- 2 cups Cool Whip, thawed
- 10 Twinkies
Orange Ginger Chicken

Place flour in a large resealable plastic bag
- 1/3 cup flour
- 6 boneless skinless chicken thighs (about 1 1/2 lb) cubed
- 1/4 tea. salt
- 1/4 tea. pepper
- 2 Tbsp. canola oil
- 1/2 cup orange juice
- 1/2 cup orange marmalade
- 2 Tbsp. soy sauce
- 2 Tbsp. honey
- 1/2 to 1 tea. ground ginger
- Optional garnishes: thinly sliced green onion and sesame seeds
Pork Loin - Dijon-Rubbed Pork

Score the surface of the pork, making diamond shapes 1/4" deep
- 1 (3 lb) pork loin
- 1/4 cup Dijon mustard
- 6 garlic coves, minced
- 12 Tbsp. minced fresh rosemary
- 3/4 tea. salt
- 1/2 tea. pepper
Pumpkin Flan Cake

To prevent overflow, check cake pan to confirm it is the required 12 cup size
- 1 3/4 cups sugar, divided
- 1 cup plus 2 Tbsp. water, divided
- 1 can (12 oz) evaporated milk
- 4 oz. cream cheese, cubed, softened
- 8 eggs, divided
- 1 can (15 oz) pumpkin
- 1 pkg. (2 layer size) yellow cake mix
- 1/3 cup oil
- 1 tea. cinnamon
- 1/4 tea. ground cloves
- 1/2 cup thawed cool Whip Whipped Topping
Cranberry Sauce - Robyn's

- 1 medium orange
- 1 pear
- 1 apple
- 1 lb. fresh cranberries
- 3/4 cup sugar
- 1/4 tea. cinnamon
- 1 cup golden raisins
BBQ Baked Beans (w/ 15 bean soup mix)

Reserve seasoning packet in soup mix for another use
- 1 (20 oz) pkg. dried Cajun 15 bean soup mix*
- 1 (12 oz) pkg. diced cooked ham
- 2 cups chicken broth
- 1 cup chopped onion
- 1 (18 oz) bbq sauce
- 1/4 cup firmly packed brown sugar
- 1/4 cup molasses
- 1/2 tea. salt
- 1/4 tea. ground red pepper
- they used Hurst's HamBeens Cajun 15 Bean Soup Mix and Hormel Cure 81 ham
Orange Glazed Whole Chicken

Preheat oven to 350 degrees
- 3 oranges
- 1/4 cup honey
- 4 green onions
- 1 roasting chicken, 6-7 lb.
- 1 Tbsp. olive oil
- 1 tea. salt
- 1/2 tea. ground ginger
- 1/2 tea. roasted ground coriander
- 1/2 tea. garlic powder
- 1/4 tea. pepper
Chicken Fiesta

Coat chicken with flour. Heat butter in a 10" skillet over medium-high heat
- 4 skinless boneless chicken breast halves (about 1 lb)
- 2 Tbsp. flour
- 1 Tbsp. butter
- 1 cup tomato juice
- 1/4 cup Picante Sauce
- 1 small onion, chopped (about 1/4 cup)
- 2 cloves garlic, minced
- 4 fresh basil leaves, coarsely chopped
- crushed red pepper flakes, to taste
- 4 cups hot cooked rice
Pepperoni Lasagna Roll-Ups

Cook the noodles according to package directions; drain
- 3 lasagno noodles
- 3/4 cup ricotta cheese
- 1/2 tea. minced chives
- 1/2 tea. dried oregano
- 1/2 tea. dried basil
- 24 slices pepperoni
- 3 slices Swiss cheese, cut into thirds
- 1 cup meatless spaghetti sauce
- 1/4 cup shredded Parmesan cheese
Dip - Colby-Pepper Jack Cheese Dip

1. Preheat oven to 350°. Stir together first 5 ingredients in a large bowl until smooth
- 1 (8-oz.) package cream cheese, softened
- 2/3 cup sour cream
- 1/3 cup mayonnaise
- 1 tablespoon finely chopped canned chipotle pepper in adobo sauce
- 2 teaspoons chili powder
- 2 cups chopped cooked chicken
- 2 cups (8 oz.) shredded colby-Jack cheese blend
- 1 (4-oz.) can chopped green chiles
- 4 green onions, finely chopped
- 2 jalapeño peppers, seeded and minced
- 1/4 cup chopped fresh cilantro
- Garnish: fresh cilantro sprig
- Tortilla and sweet potato chips
