Spray a 3 or 6 qt. crock pot with cooking spray
- 6 boneless, skinless chicken breasts
- 6 slices swiss cheese
- 1 (10 1/4 oz) can cram of mushroom soup
- 1/4 cup milk
- 2 cups herb stuffing mix
- 1/2 cup butter, melted
- nonstick cooking spray
Pork Tenderloin with Sweet and Sour Cabbage

Preheat oven to 450 degrees
- 1 - 1 lb. pork tenderloin
- 1/2 tea. salt
- 2 Tbsp. vegetable oil
- 2 Tbsp. grainy mustard
- 2 slices bacon, chopped
- 1 onion, thinly sliced
- 1/2 large head red cabbage, cored and thinly sliced
- 1/4 cup cider vinegar
- 1/4 cup sugar
Ravioli - Sage & Browned Butter

- 1/2 cup butter, cubed
- 1/2 cup coarsely chopped fresh sage

BROWNIES: coat 20 disposable 4" pie pans with cooking spray; place on 2 baking sheets
- BROWNIES
- 1 1/2 cups flour
- 1/4 cup unsweetened cocoa powder
- 1 tea. salt
- 10 oz. semisweet chocolate, chopped
- 2 sticks unsalted butter, cut into 1" cubes
- 1 1/2 cups sugar
- 6 eggs, at room temperature
- 2 tea. vanilla
- CHOCOLATE CHIP COOKIES
- 1 cup plus 2 Tbsp. flour
- 12/2 tea. baking soda
- 1/2 tea. salt
- 1 stock unsalted butter, at room temperature
- 1/2 cup packed brown sugar
- 1/4 cup sugar
- 1 egg
- 1 tea. vanilla
- 1 cup semisweet chocolate chips
Bacon Wrapped Chicken (Rachel Ray show)

- 1 whole chicken, skinned and cut into pieces (save wings for chicken stock)
- 1 Fresno Red Pepper, seeded, deveined and chopped
- 4 large cloves garlic, chopped
- 1 Tbsp. fresh thyme, chopped
- 2 sprigs rosemary, stripped and chopped
- 2 Tbsp. olive oil
- salt and pepper

- 1/3 cup sliced almonds
- salt
- 12 pound haricots verts, cut into 1" pieces
- 1 Tbsp. butter
- 1/2 medium onion, finely chopped1 1/2 cups converted (parboiled) white rice
- 23/4 cups chicken broth
- 1 bay leaf
- 1 wide strip lemon zest
- 1 tea fresh lemon zest
- 1 tea. fresh lemon juice

Cole Slaw - Tangy Mustard Slaw

Combine first3 ingredients in a large bowl
- 7 cups shredded green cabbage (about 1/2 head)
- 1 cup thinly sliced red onion
- 1 cup grated carrot
- 1/4 cup white wine vinegar
- 2 Tbsp. sugar
- 2 Tbsp. whole-grain mustard
- 2 Tbsp. mayonnaise
- 1/8 tea. salt
- 1/8 tea. pepper
- 1/8 tea. ground red pepper
Jam - Cantaloupe Jam

Yield: 3 half pints
- 2 1/2 cups chopped peeled cantaloupe (about 2 lbs)
- 1 1/2 cups sugar
- 1 vanilla bean, split and scraped
- zest from 1 lemon
- 1 Tbsp. freshly squeezed lemon juice
- 1 (3 oz) packet liquid pectin

- 14 oz. can chicken broth
- 8 oz. can tomato sauce
