6# tomatoes = 9 cups (4 medium = 2 cups) 6# apples = 9 cups (2 large = 3 cups)
- 9 cups green tomatoes
- 9 cups granny smith apples
- 2# bag brown sugar
- 2 cups cider vinegar
- 1 box currants
- 1 box golden raisins
- 1 pkg. (6-8 oz) Craisins
- 2 bags (7 oz) Sun Maid Fruit Bites
- 1/2 T cinnamon
- 1 1/2 tea. cloves
- 1 1/4 tea. allspice
- 1 tea. pepper
- 1 Tbsp. salt
- zest of 1 orange and 1 lemon
- juice from 1 orange and 1 lemon
Ranch Spread (make a snowman at Christmas time)

At Christmas shape into two balls
- 2 pkgs. (8 oz each) cream cheese, softened
- 1/2 cup butter, softened
- 1 envelope ranch salad dressing mix
- 1 Tbsp. spicy brown mustard
- 1 garlic clove, minced
Sweet Potato - Mini Souffles

Preheat oven to 350 degrees
- 4 medium yams or sweet potatoes, peeled and chopped into large chunks
- 2 tbsp. butter
- 2 Tbsp. milk
- 1 Tbsp. honey
- 1 tea. salt
- 1/2 tea. cinnamon
- 1/4 tea. vanilla
- 1/4 tea. nutmeg
- 4 egg whites
Cuban Shredded Beef

In 3 1/2 qt. slow cooker combine bell pepper, onion, and garlic; place roast on top
- 1 large green bell pepper, chopped
- 1 medium yellow onion, chopped
- 2 garlic cloves, chopped
- 1 (2 1/2-3 lb) bottom round roast
- 1 (8 oz) can tomato sauce
- 2 tea. chili powder
- 2 tea. ground cumin
- 1 tea. salt
- 1 tea. pepper
Sausage and Potato Stew. (Add Sauerkraut?)

In a large skillet, cook bacon until crisp
- 2 slices bacon
- 1/2 lb. Polish sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 potatoes, peeled and cubed
- 4 cups chicken broth
- 2 cups water
- 1 cups frozen corn
- 1 (13 oz) can evaporated milk
- 2 Tbsp. cornstarch
- 1/4 cup chopped chives
- 1 can sauerkraut
3 Cheese Penne Bake

Cook pasta 6 minutes, drain
- 12 oz. uncooked penne pasta (3 1/2 cups)
- 1 1/2 cups half-n-half
- 2 Tbsp. butter, melted
- 1/2 tea. salt
- 1/4 tea. dry mustard
- 1/4 tea. ground red pepper
- 1 (12 oz) can evaporated milk
- 1 cup (4 oz) shredded Gruyere cheese
- 1/2 cup (2 oz) freshly grated Parmesan cheese
- 1/2 cup (2 oz) shredded American cheese
- 1 1/2 cup soft fresh breadcrumbs
- 2 Tbsp. butter, melted
- 1 Tbsp. chopped fresh parsley
Red Potatoes - Individual Potato-Bacon Frittatas

Place potatoes in a large saucepan, and cover with water
- 3/4 pound small red potatoes (about 6)
- Cooking spray
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 2 garlic cloves, minced
- 3/4 cup (3 ounces) shredded reduced-fat Swiss cheese
- 4 bacon slices, cooked and crumbled (drained)
- 1 3/4 cups egg substitute
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Pinto Beans- Refried

Cook bacon and onion in olive oil over medium heat, 7 minutes
- 4 bacon strips chopped
- 1 onion, chopped
- olive oil
- 1/2 cup chopped cilantro
- 2 minced garlic cloves
- 1 minced, seeded jalapeno
- 1/2 tea. cumin
- 1/2 tea. dried oregano
- 1/2 tea. salt
- 2 (14.5 oz) cans pinto beans, drained and rinsed
- 2 1/2 cups water
- Add'l cilantro and hot sauce
Apple Harvest Pumpkin Bread

Preheat oven to 350 degrees
- 2 cups flour
- 1/2 cup packed brown sugar
- 1/2 tea. salt
- 1 tea. baking soda
- 1/2 tea. baking powder
- 1 tea. nutmeg
- 1 tea. cinnamon
- 1/2 tea. cloves
- 1 1/2 cups sugar
- 3/4 cup butter, softened
- 2 eggs
- 1 15-oz. can pumpkin
- 1 tea. vanilla
- 3-4 granny smith apples, peeled and diced
- 1/2 cup raisins (optional)
- 1/2 cup walnuts (optional)
- TOPPING
- 2 tea. sugar
- 2 tea. brown sugar
- 1 tea. cinnamon
Coleslaw - Carrot and Grape Slaw

Toss all ingredients together in a large bowl
- 2 cups shredded carrots
- 2 cups chredded cabbage (preferably red or purple)
- 1 cup halved green grapes
- 1/4 cup roughly chopped walnuts
- 1 Tbsp. finely chopped red onion
- 2 Tbsp. red wine vinegar
- 1 Tbsp. olive oil
- 1/4 tea. salt
- freshly ground black pepper
