Drain the has brown potatoes and place in a 4 qt
- 1 (20 oz) pkg. frozen has brown potatoes, thawed
- 1 sweet potato, peeled
- 1 Tbsp. butter
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 (10 oz.) jar Alfredo sauce
- 1 (3 oz)pkg. cream cheese, cubed
- 3/4 cup sour cream
- 3/4 cup shredded Swiss cheese
- 1/2 cup milk
- 1 tea. dried basil
- 1/8 tea. pepper
Ham and Cheese Breakfast Bake (like Bread Pudding)

Spray 9" sq. baking dish with nonstick spray
- 2 1/2 cups low fat milk
- 8 eggs
- 2 Tbsp. Dijon mustard
- 1/4 tea. salt
- 1/4 tea. pepper
- 1 tea. chopped thyme
- 1 large baguette, thinly sliced
- 8 oz. Cheddar cheese, shredded
- 8 oz. thinly sliced deli ham
- 1 Tbsp. snipped chives
Pumpkin Cheesecake Bars

Preheat oven to 325 degrees
- 1 1/2 cups gingersnap crumbs, plus additional for garnish
- 6 Tbsp. (3/4 stick) butter, melted
- 2 eggs
- 1/4 cup plus 2 Tbsp. sugar, divided
- 2 1/2 tea. vanilla, divided
- 11 oz. cream cheese, soft3ned
- 1 1/4 cups canned pumpkin
- 1 tea. cinnamon
- 1/4 tea. ginger
- 1/4 tea. nutmeg
- 1/4 tea. cloves
- 1 cup sour cream
Corn Fritters in Your Waffle Iron

Combine all ingredients. Preheat wallfe iron
- 1 1/3 cup flour
- 2 tea. baking powder
- 1 egg, well beaten
- 1 Tbsp. sugar
- 1/4 tea. salt
- 2 Tbsp. melted butter
- 2/3 cup milk
- 1 cup canned whole corn, drained
Chicken Vegetable Turnovers (like a chickn pot pie)

Heat oven to 400 degrees. stir the gravy, thyme, garlic powder, vegetables and chicken in a medium bowl
- 1 jar (12 oz) roasted chicken gravy
- 1/2 tea. dried thyme leaves, crushed
- 1/8 tea. garlic powder
- 1 1/2 cups frozen mixed vegetables, thawed
- 2 cups chopped cooked chicken
- flour
- 1 pkg. (17.3 oz) pkg. puff pastry sheets, thawed
Pickled Beets (I made w/ #10 can of beets)

Made 6 pints with just a small amount left over for a salad or two
- 1 #10 can sliced beets
- 1 medium yellow onion, sliced thin
- 1 pkg Mrs Wages pickled Beet mix
- Because of the large amount of beets/onions I used 1 pkg Mrs. Wages and added a teaspoon of cloves and cinnamon. I doubled the vinegar and water. Made 6 pints.

- 1 1/2 cups finely chopped carrot (3 medium)
- 2 cups finely chopped zucchini (1 medium)
- 4 cloves garlic, minced
- 3 cups sliced mushrooms (8 oz)
- 2 (6 oz) packages prewashed baby spinach
- 2 Tbsp. fresh snipped basil
- 1 egg, beaten
- 1 15-oz container ricotta cheese
- 1/3 cup finely shredded Parmesan cheese
- 1/2 tea. salt
- 1/4 tea. pepper
- 1 26-oz jar tomato and basil pasta sauce (2 1/2 cups)
- 2 cups shredded mozzarella cheese (8 oz)
- Rosemary sprigs (optional)
Wine Marinade
