Southwest Brunch Casserole (1/2 english muffin per person)

Spread butter over cut sides of each muffin half
- 4 tea. butter, softened
- 2 English Muffins, split
- 1/2 lb. bulk pork sausage
- 4 eggs
- 1/4 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup canned chopped green chilies
Carmel-Pecan Cheesecake Pie

Line a 9" pie pan with pastry
- 1 sheet refrigerated pie pastry
- 1 pkg. (8 oz) cream cheese, softened
- 1/2 cup sugar
- 4 eggs
- 1 tea. vanilla
- 1 1/4 cups chopped pecans
- 1 jar caramel ice cream topping
Potato Smashers

PLACE potatoes and water in 2-qt
- 8 small new potatoes (3/4 lb.), about 1-1/2 inches in diameter
- 1/2 cup water
- 4 slices Turkey bacon
- 2 Tbsp. Italian Dressing
- 1/2 cup Shredded Sharp Cheddar Cheese
Waffles - Zucchini Waffles

Combine all ingredients. Cook in waffle iron until done
- 1/4 cup shredded cheddar cheese
- 1 cup bisquick or pancake mix
- 2 cups grated zucchini
- 2 eggs
- 1 Tbsp. butter, melted (or oil)
Nuts - Pumpkin Pecans

Combine the sugar, pie spice, salt and ginger; seat aside
- 1 Tbsp. sugar
- 1 tea. pumpkin pie spice
- 1/2 tea. salt
- 1/2 tea. ground ginger
- 2 Tbsp. water
- 2 Tbsp. honey
- 2 tea. canola oil
- 1 1/4 lb. pecan halves (about 5 cups)
Banana Pineapple Loaf

Preheat oven to 350 degrees
- 1 cup (2 sticks) butter, softened
- 1 cup sugar
- 4 eggs
- 1 cup ripe, mashed bananas
- 4 cups sifted flour
- 2 tea. baking powder
- 1 tea. baking soda
- 1/2 tea. salt
- 1 915 oz) can crushed pineapple with liquid
- 1 (7 oz) can flaked coconut, optional
- 1 cup chopped pecans
- Serve with cream cheese spread

Preheat oven to 300 degrees
- FOR THE BATTER
- 1 cup butter, melted
- 3 eggs
- 1/4 cup milk or cream
- 1 tea. vanilla
- 1 cup flour
- 1/2 cup sugar
- 3 tea. baking powder
- pinch of salt
- For the topping: Blueberry sauce and sour cream
- TRADITIONAL CHEESE FILLING
- 2 lbs. (two 24 ox containers) small curd cottage cheese, blended to smooth
- 3 eggs
- 1/4 cup sugar
- juice of one lemon
- ALTERNATE RICOTTA FILLING
- 3 cups whole milk ricotta cheese
- 8 oz. cream cheese
- 3 eggs
- 4 Tbsp. powdered sugar
- juice from one lemon
- 1/8 tea. salt
Spaghetti Squash Supper

Halve squash lengthwise and discard seeds
- 1 medium spaghetti squash (3 - 3 1/2 lb)
- 1/2 cup water
- 12 lb. bulk Italian sausage
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 small zucchini, chopped
- 1 garlic clove, minced
- 1 can (15 1/2 oz) great northern beans, rinsed and drained
- 1 can (14 1/4 oz) Italian stewed tomatoes
- 1 tea. Italian seasoning
- 1/4 tea. seasoned salt
- ]Shredded Parmesan cheese
Cranberry-Raspberry-Peach Jelly

Makes about 7 half pints
- 2 cups cranberry-raspberry drink
- 2 cups peach nectar
- 1/4 cup lemon juice
- 1 1.75 oz. pkg. regular powdered fruit pectin
- (or 6 Tbsp. classic powdered fruit pectin)
- 4 1/2 cups sugar
Alaskan Amber Crock Pot Roast

Lightly rub roast with salt and place in slow cooker
- 3-5 lb. chuck roast
- 4-6 large potatoes, cut in half and quartered (red potatoes taste best)
- 6-8 carrots, sliced
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 12 oz. Alaskan Amber
- salt
