Place chicken in a large zip lock bag; set aside
- 6 boneless, skinless chicken breast halves
- 1/3 cup soy sauce
- 1/4 cup lime juice
- 1 Tbsp. Worcestershire sauce
- 1/2 tea. dry mustard
- 2 cloves garlic, minced
- 1/2 tea. pepper
Muffins - Mini Blueberry Muffins

Preheat oven to 375 degrees
- 2 1/4 cups flour
- 1 1/2 tea. baking powder
- 1/2 tea. cinnamon
- 1/2 tea. salt
- 1 eggs
- 3/4 cup milk
- 2/3 cup vegetable oil
- 1 1/4 cup sugar
- 1 tea. vanilla
- 1 cup blueberries
Corned Beef Paninni

Night Before Casserole

Spread bread with butter. Place six slices in a greased 9x13 baking dish
- 12 slices white bread, crusts removed
- 6 to 8 Tbsp. butter, softened
- 6 slices deluxe American cheese
- 6 slices boiled or baked ham
- prepared mustard
- 4 eggs, beaten
- 3 cups milk
- chopped fresh parsley
- MUSHROOM SAUCE
- 1 can condensed cream of mushroom soup, undiluted
- 1/3 cup milk
- dash worcestershire sauce
Mini Chocolate/Bourbon Pecan Tarts

Prheat oven to 350 degrees
- 1/2 cup dark corn syrup
- 1/3 cup sugar
- 2 Tbsp. butter, softened
- 1/8 tea. salt
- 3 pkgs frozen mini phyllo shells, thawed (Athens Mini Fillo Shells)
- 3 Tbsp. bourbon
- 2 eggs, lightly beaten
- 3/4 cup chopped pecans
- 1/3 cup mini semisweet chocolate morsels
Corn - Cream Cheese Corn

Instructions In a medium saucepan combine – corn, butter, and cream cheese
- 1 pound of corn ( fresh or thawed)
- 1 Tablespoon of butter
- 3 oz of cream cheese ( low fat)
- Red Pepper Flakes
- Pepper
Orzo - Lemony Herbed Orzo

Bring 3 qts. water to boil
- 2 cups dry orzo pasta
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 1 Tbsp. finely minced shallots
- 1/2 cup chopped fresh Italian parsley
- 1/4 cup thinly sliced chives
- 1 Tbsp. chopped fresh basil
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. finely minced lemon zest
- 3/4 tea. salt
- fresh ground pepper
- 1/3 cup grated Parmesan cheese
Chipolte Shredded Beef

In a blender, puree chipotle chiles with adobo sauce until smooth
- 1 7 oz. can chipotle chiles in adobo sauce
- 1 15 oz. can crushed tomatoes
- 1 Tbsp. lime juice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 2 lb. beef chick pot roast, trimmed
- salt and pepper
- corn tortillas
- shredded lettuce
- shredded jack cheese
- sliced avocado
- sour cream
Chicken and Rice (baked in a cast iron skillet)

Preheat oven to 350 degrees
- 2 Tbsp. olive oil
- 4 garlic cloves
- 1 onion, chopped
- 1 gr3en bell pepper, chopped
- 1 tea. achiote or annatto
- 6 whole chicken legs (thighs included)
- 4 cups chicken brown
- 1 (15 oz) can chopped tomatoes
- 2 Tbsp. vinegar
- 1/3 cup green olives
- 1 Tbsp. capers, drained
- 1/2 tea. dried oregano
- crushed red pepper flakes to taste
- 1/2 tea. salt
- 1/2 ta. pepper
- 3 cups long grain white rice

- 2 cups tortilla chips
- 1 cup shredded cooked chicken breast
- 1/3 cup chopped onion
- 1 - 8 oz. can tomato sauce
- 1 - 8 oz. can hot "mexican style" tomato sauce
- 1 cup shredded Monterey Jack
