- 3 tsp. oil,divided
- 12 oz. lean beef chuck for stew,cut into bite size pieces
- 1 large onion, chopped
- 2 large carrot, diced
- 12 oz.shiitake mushrooms,stems discarded and caps sliced
- 2 tsp. minced garlic
- 4 cups chicken broth
- 2 cups water
- 1/2 cup barley(not quick cooking)
- 3/4 tsp. kosher salt,or to taste
- 1/4 tsp. freshly ground black pepper
Broccoli Mushroom Casserole

In a large saucepan,combine the water,mushrooms,broccoli and onion
- 2 cups water
- 1/2 lb.sliced fresh mushrooms
- 3 cups chopped fresh broccoli
- 1 small onion, chopped
- 1 can(103/4oz.)undiluted mushroom soup
- 3/4 cup shredded Swiss cheese
- 1/2 cup mayonnaise
- 2 egg whites
- 1 egg
- 1 tsp. ground mustard
- 1/4 tsp. pepper
- 1-1/4 cups(5oz.) shredded cheddar cheese,divided
- 1 cup crushed baked potato chips
Brownies

Mix sugar and cocoa; stir in butter
- 2 cups sugar
- 1/4 cup cocoa
- 1 cup melted butter
- 4 eggs
- 2 tsp vanilla
- 1 1/2 cup flour
- 1 tsp salt
- 1/2 cup nuts or chocolate chips
- FROSTING
- 6 Tbs butter
- 3 Tbs cocoa
- 4 1/2 Tbs milk
- 3 cup powdered sugar
- 3/4 tsp vanilla
- 1/2 tsp salt
- 3/4 cup chopped pecans
Chili Soup

- 1 lb.hamburger
- 1 can kidney beans
- 1 can tomato soup
- 1 can water
- 1 can tomato sauce
- 1 onion chopped
- 2 tsp.chili powder
- 1/2 tsp.salt
- 1/2 tsp. pepper
Creamy Chicken -Rice Casserole

In a large bowl,combine all ingredients
- 3 cups cubed cooked chicken
- 22/3 cups chicken gravy
- 2 cups uncooked instant rice
- 1 can(103/4oz.)condensed cream of chicken soup,undiluted
- 1 cup(8oz.)sour cream
- 1 can(8oz)mushroom stems and pieces,drained
- 1 med onion,chopped
- 2/3 cup chopped celery
- 2/3 cup water
- 1/4 cup chopped pitted green olives
- 1/4 cup chopped ripe olives
- 2 tsp. dried parsley flakes
- 1/8 tsp.pepper

- 3 bacon strips,diced
- 1/2 cup chopped green pepper
- 2 cans(15oz.ea.)pork & beans
- 1/3 cup hickory smoke barbecue sauce1/3 cup packed brown sugar
- 2 tsps. prepared mustard

- 2 C. all purpose flour

- 2 eggs,beaten
Smoky Cheese & Potato Soup

- 6 oz. smoked cheese,shredded
- 1 Tbsp.all purpose flour
- 4 oz. ham,finely chopped
- 1 medium carrot,finely chopped
- 1/2 tsp. curry powder
- 1/2 tsp.paprika
- 3 cups milk
- 1/2 24-oz.pkg. refrigerated garlic mashed potatoes
- Canned shoestring potatoes,fresh snipped parsley,and/or paprika(optional)
Smoked Whitefish Spread

1.In a medium bowl,mash together whitefish and cream cheese with a fork
- 8 ounces smoked whitefish,skin and bones removed
- 3 ounces cream cheese,softened
- 2 tablespoons finely chopped celery
- 2 tablespoons finely chopped dill pickle
- 2 tablespoons finely chopped green onion
- 2 tablespoons mayonnaise
- 1 1/2 teaspoons prepared horseradish
- 1 1/2 teaspoons dill pickle juice
- 1 teaspoon Dijon-style mustard
