- 4 large beefsteak tomatoes, cored and cut into wedges
- 2 large cucumbers, peeled, halved lengthwise, and cut in 1/4-inch thick slices
- 1 cup kalamata olives, pitted and halved
- 1 small red onion, thinly sliced
- 2 tablespoons chiffonade fresh basil
- 1 tablespoon finely chopped fresh mint leaves
- 1/2 teaspoon minced fresh oregano leaves
- 3 tablespoons Italian red wine vinegar
- 1 1/2 teaspoons lemon zest
- 1 1/4 teaspoons salt
- 1/2 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- 3/4 cup extra-virgin olive oil

For the short ribs: Marinate the short ribs with wine, shallot, garlic and herbs overnight
- 4 pieces short ribs, 2-inch cut
- 4 cups red wine
- 1 shallot, minced
- 1 clove garlic, chopped

- 5 sprigs fresh rosemary
- 4 cups veal stock
- 2 tablespoons ketchup
