PUMPKIN PIE SPICE

- 1/4 c. cinnamon
- 1 tbsp. allspice
- 1-1/2 tsp. each ginger and nutmeg

SLOPPY JOE PIE

Brown ground beef & onion; drain
- 1 # ground beef
- 1/2 C. chopped onion
- 8 oz. can tomato sauce
- 8 oz. can whole kernel corn, drained
- 1/4 c. water or liquid from corn
- 1 envelope sloppy joe seasoning mix
- 10 oz. can Hungry Jack Big Flaky biscuits
- 2 Tbsp. milk
- 1/3 c. cornmeal
- 1 c. shredded cheddar cheese
MANSION HOUSE WALNUT RUM CAKE

Preheat the oven to 325 degrees
- Glaze:
- 1 cup chopped walnuts
- 1 package yellow cake mix with pudding in it-(not the one that is "butter" recipe)
- 3 large eggs
- 1/3 cup Wesson oil (or other vegetable oil)
- 1/2 cup cold water
- 1/2 cup dark rum (80 proof)
- 1 stick of butter
- 1/4 cup water
- 1 cup granulated sugar
- 1/2 cup dark rum
ASIAN PINEAPPLE CHICKEN

Blend together the pineapple and juice, soy sauce, sesame oil, garlic, and ginger and pour over the chicken pieces ...
- 1 whole chicken, cut up, or 8 chicken thighs, skin removed
- One 14-ounce can Libby's Splenda Sweetened Pineapple – chunks or rings work well
- 1/4 cup soy sauce
- 1 teaspoon sesame oil
- 2 garlic cloves, minced
- 1/2 teaspoon grated fresh ginger
Eggnog Liqueur

Inspired by the Advocaat recipe in the book “Classic Liqueurs” by Cheryl Long and Heather Kibbey
- 1 1/4 cups brown sugar (lightly packed) or raw sugar
- 1 vanilla bean, sliced in half lengthwise
- 1/2 teaspoon orange extract
- 1 cup vodka
- 5 whole eggs
- 1 additional egg yolk
- 2/3 cup evaporated milk
- 1 scraping of fresh grated nutmeg
BEEF AND GUINNESS STEW

Trim the meat of any fat or gristle, and cut into 2-inch cubes
- 2 pounds stewing beef
- 3 tablespoons oil
- 2 tablespoons flour
- Salt and freshly ground black pepper
- Pinch of cayenne
- 2 large onions, coarsely chopped
- 1 garlic clove, crushed
- 2 tablespoons tomato puree, dissolved in 4 tablespoons water
- 1 1/4 cups Guinness
- 2 cups largely diced carrots
- Sprig of fresh thyme
- Chopped parsley, for garnish
GINGERBREAD COFFEECAKE MUFFINS

Preheat oven to 375°F. Coat 12 muffin cups with cooking spray
- Streusel
- 1/4 cup all-purpose flour
- 3 tablespoons dark brown sugar
- 1 tablespoon minced crystallized ginger
- 1/2 teaspoon ground cinnamon
- 1 tablespoon canola oil
- Muffin Batter
- 1 large egg
- 1 large egg white
- 1/2 cup packed dark brown sugar
- 3/4 cup fruit puree fat replacement, or prune pie filling (Lekvar)
- 3/4 cup dark molasses, (not blackstrap)
- 1/2 cup nonfat plain yogurt
- 1/4 cup canola oil
- 3 tablespoons minced crystallized ginger
- 2 1/4 cups all-purpose flour
- 2 1/2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon freshly ground pepper
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
TURKEY POT PIE WITH BABY VEGETABLES

Peel and halve the carrots, then thinly slice crosswise
- 10 baby carrots
- 1 cup pearl onions
- 1/3 pound fresh white mushrooms
- 1 1/4 cups frozen artichoke hearts, thawed
- 1/4 cup plus 2 tablespoons olive oil
- 1 teaspoon dry mustard
- 3/4 cup all-purpose (plain) flour
- 2 -1/2 cups chicken stock or broth
- 1 garlic clove, minced
- 2 pounds skinless, boneless turkey breast, diced
- 1 cup shelled edamame or English peas
- 1 tomato, seeded and diced
- 1 tablespoon each fresh chopped dill and basil
- 1/4 cup low-fat sour cream
- 1 1/2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup cornmeal
- 1 1/2 teaspoons baking powder
- 3/4 cup plain soy milk (soya milk)
- 1 tablespoon dark honey
RASPBERRY CHIPOTLE CHOCOLATE CAKE WITH SEEING DOUBLE CHOCOLATE SAUCE

Butter and flour a 10-inch diameter bundt pan; tap out all excess flour
- 6 ounces bittersweet chocolate, broken into pieces
- 2 cups boiling water
- 3-1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons salt
- 1/2 teaspoon baking powder
- 12 tablespoons (1-1/2 sticks) unsalted butter, softened
- 2 cups sugar
- 4 eggs
- 1-1/2 cups Fischer & Wieser's Original Roasted Raspberry Chipotle Sauce
- 2 teaspoons vanilla extract
- 1 jar Texas on the Plate Seeing Double Chocolate Sauce
