Applebee's Pico De Gallo

Mix all ingredients together in large containers until well blended
- 3 large tomatoes diced
- 1 large onion diced
- 2 tablespoons diced Jalapenos
- 1/2 cup fresh cilantro (diced)
- 2 teaspoons Salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 tablespoon white vinegar
ALMOND BARS

Make frosting mix: 1½ cups powdered sugar ¼ cup softened butter 1-2 Tbsp
- Base:
- 1 cup butter, softened
- 2 cups flour
- 1/2 cup powdered sugar
- Mix and pat in 9x13 pan. Bake at 350º for 20-25 minutes.
- nd Layer:
- 8 oz. cream cheese, softened
- 2 eggs
- 1/2 cup granulated sugar
- 1 tsp. almond extract
- Beat and pour over base as soon as it comes out of the oven. Bake another 15-20 minutes. Cool.
BLACK BEAN CAKES WITH ROASTED RED PEPPER VINAIGRETTE

Make the Roasted Red Pepper Vinaigrette (below) and set aside
- 1/2 cup Roasted Red Pepper Vinaigrette (see recipe in Dressings/Vinaigrettes)
- 1 cup dried black beans
- 1 large yellow onion, peeled and roughly chopped
- 1 large green bell pepper, seeded and roughly chopped
- 2 cloves garlic, peeled and minced
- 1 teaspoon black pepper
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander seeds
- 1/4 teaspoon salt
- pinch cayenne pepper
- 2 tablespoons olive oil
FRUIT PIE

Heat the oven to 400°F. Beat the egg and water in a small bowl with a fork or whisk
- 1 pkg. (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
- 1 egg
- 1 tbsp. water
- 1 can (21 ounces) fruit pie filling, any variety
MIXED BEAN SALAD

Combine all beans and onions and mix gently
- 15 oz. can green beans (all rinsed and drained)
- 15 oz. can wax beans
- 15 oz. can kidney beans
- 15 oz. can garbanzo beans
- 1/4 c. chopped onion
- 1/4 c. orange juice
- 1/2 c. cider vinegar
- Sugar if desired

- 1 C. butter
- 1/2 c. sugar
- 2 tsp. vanilla
- 2 tsp. water
- 2 c. flour
- 1 c. pecans, chopped
CHICKEN POT PIE IN CREPES

Crepes: In a medium bowl beat the Ricotta with the eggs
- Crepes:
- 4 eggs
- 1/2 cup ricotta
- 4 tablespoons flour
- Pinch of salt
- 2 tablespoons milk
- Filling:
- 3 tablespoons butter
- 1/4 cup diced onion
- 1/4 cup finely diced celery
- 1/2 cup shredded carrots
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon sage
- 1 teaspoon thyme
- 1 teaspoons Splenda
- Dash grated fresh nutmeg
- 3/4 cup chicken broth
- 3/4 cup ff half & half
- 1 cup frozen peas, thawed
- 2 cups diced or shredded, cooked chicken
LEMON MERINGUE COOKIES

Make the meringues: Preheat oven to 200 degrees F
- 6 large egg whites, at room temperature
- 2 teaspoon(s) fresh lemon juice
- 1/8 teaspoon(s) salt
- 1 teaspoon(s) pure lemon extract
- 1 teaspoon(s) pure vanilla extract
- 1 1/4 cup(s) sugar
GOURMET COOKIE MIX IN A JAR

- 1/2 c. brown sugar
- 1/2 c. chopped nuts
- 1/2 c. chocolate chips
