CHOCOLATE CHEESECAKE CANDY CANE BARS

Preheat oven to 350 degrees F
- Crust:
- 20 chocolate wafer cookies
- 3 tablespoons unsalted butter, melted
- 1 tablespoon sugar
- 1/2 teaspoon ground coffee beans
- 1/4 teaspoon fine salt
- Filling:
- 8 ounces semisweet chocolate, finely chopped
- 8 ounces cream cheese, room temperature
- 2/3 cup sugar
- 1/2 cup sour cream
- 2 large eggs, room temperature
- Glaze:
- 4 ounces bittersweet chocolate, chopped
- 2 tablespoons unsalted butter
- 1 teaspoon light or dark corn syrup
- 2 tablespoons sour cream, room temperature
- 1/2 cup crushed candy canes (see Cooks Note)
CREAM CHEESE FROSTING

- 2 c. powdered sugar
- 3 Tbsp. butter
- 1/3 tbs. cream cheese
- 1/2 tsp. vanilla
CARIBBEAN SWEET POTATO & SAUSAGE SOUP

In a large pot over medium-low heat, combine the olive oil, onion, celery, green pepper, and turkey sausage
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 medium sweet green pepper, diced
- One 14-ounce pkg smoked turkey sausage, cut into 1/2-inch chunks
- 2 large sweet potatoes or yams, diced into 1/2-inch chunks
- 1 tablespoon pearl barley
- Two 14-ounce cans diced tomatoes with garlic, oregano, basil - pureed
- One 14-ounce can reduced-sodium chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cumin
- 1/8 teaspoon allspice
- 1/8 teaspoon red pepper flakes
- Pinch freshly grated nutmeg
- One 15-ounce can garbanzo beans, drained, rinsed
- 3/4 cup lite coconut milk

- 1 package (15 1/4 ounce) OREO Cool Mint Creme Cookies, finely crushed (about 4 cups)
- 2 packages (6 squares each) BAKER'S White Chocolate, melted
- 6 drops green food coloring
- 3 tablespoons green and/or white decorating icings
- 40 cinnamon red hot candies
CHUNKY TURTLE MONKEY LOVE BARS

Preheat oven to 350 degrees
- 1 stick unsalted butter
- 3/4 cup flour
- 2 tablespoons unsweetened baking cocoa
- 1/2 cup graham cracker crumbs
- 1/3 cup sugar, plus 2 tablespoons
- 1 tablespoon brown sugar
- 4 oz dark chocolate chunks
- 1/2 cup salted peanuts
- 1 banana, chopped to 1/2″ pieces
- 1 tablespoon heavy cream
FUDGE ICING

Mix sugar and cocoa in pan
- 1/2 c. sugar
- 2 tbsp. cocoa
- 2 tbsp. butter
- 1/4 c. milk
- 1 tbsp. corn syrup, light
- Dash salt
- 1/2 - 3/4 c. powdered sugar
- 1/2 tsp. vanilla

VEGGIE CITY DIP

Heat the oil in a skillet over medium heat
- 1 teaspoon olive oil
- 1/3 cup finely chopped onions
- 1/3 cup finely chopped green or red bell peppers
- 1/3 cup finely chopped zucchini
- 1/3 cup finely chopped celery
- 1/3 cup peeled and finely chopped eggplant
- 1/3 cup chopped tomatoes
- 1 teaspoon chopped, fresh basil (dried is fine)
- salt to taste
- freshly ground black pepper
- 1 teaspoon red wine vinegar
- 1/3 teaspoon sugar
CHEESY ASPARAGUS SOUP

In a large kettle, cook asparagus and onion in a small amount of water until tender
- 3 pounds fresh asparagus, trimmed
- 1 small onion, chopped
- 2 cans (10-3/4 ounces each) condensed cream of asparagus soup, undiluted
- 2 soup cans milk
- 1 jar (4-1/2 ounces) sliced mushroom, drained
- 3 cups (12 ounces) shredded cheddar cheese
GARLIC CHICKEN

- 4 cloves garlic, chopped
- 1/4 c olive oil
- 1/2 c garlic herb parmesan cheese
- 1/2 c seasoned bread crumbs
- 4 boneless, skinless chicken breasts

- 2/3 c raspberry rum
- 2/3 c water
- 1/2 c oil
- 1 c raspberry preserves
- 1/2 c raspberry rum
- 1/2 c power sugar
- 1 pt fresh raspberries
