CHICKEN & CORN CHOWDER

Dry the chicken breasts with paper towel and season with salt and pepper
- 1 pound chicken breasts skinned and boned
- salt and pepper to taste
- 3 tablespoons butter
- 3 cups corn kernels fresh or frozen
- 3 oz. lean salt pork or bacon in 1/4 inch dice
- 3/4 cup finely diced onions
- 1/2 cup finely chopped celery
- 2 cups potatoes in 1/2 inch dice
- 4 cups chicken stock
- 1 cup heavy cream
- 1 tablespoon finely chopped fresh parsley
FRENCH DRESSING RECIPE

Process all ingredients in a blender until smooth
- 1 cup canola oil
- 2/3 cup sugar
- 1/2 cup ketchup
IRISH BEEF STEW

Cut beef into bit size cubes
- 2 # beef stew meat
- 1 onion, finely chopped
- 2 stalks celery, finely chopped
- 1 bay leaf
- 2 lg. potatoes, peeled and chopped into chunks
- 3 lg. carrots, peeled a d cut into thick slices
- 16 oz. bag frozen peas
- 2 cans beef broth
- 2 (8 oz) cans tomato sauce
- Flour in a plastic bag
- 2 tbsp. cooking oil
- salt and pepper to taste
CRÈME DE MENTHE SQUARES

- 1-1/4 c. butter or margarine
- 1/2 c. unsweetened cocoa powder
- 3-1/2 c. powdered sugar, sifted
- 1 egg, beaten
- 1 tsp. vanilla

- 1/3 c. crème de menthe
- 1-1/2 c. semi-sweet chocolate chips

HELLMAN'S MAYONNAISE RECIPE

- 1 egg (at room temp)
- 1 teaspoon dry mustard

- 1 1/4 cup oil (any type...corn, vegetable, canola)

- 3 tablespoons lemon juice or vinegar
CARAMELS

Into 4 qt. kettle put sugars, corn syrup and cream
- 2 c. white sugar
- 1 c. brown sugar
- 1 c. light corn syrup
- 2 c. half and half
- 1/3 c. butter
- pinch of salt
- 1-1/2 tsp. vanilla
MAC AND CHEESE IN THE CROCK POT

Toss everything into the crock pot and cook all day
- 2 c. elbow macaroni
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 c. milk
- 1 3# brick Velveeta cheese, cubed
- 1 pkg. dried beef, shredded
- 3 hard boiled eggs, diced
MARBLE SQUARES

- 3/4 c. water
