Pickled Pears (Bobby Shelton)

Simmer until pears are soft, but not to soft
- 8 lbs. of sliced pears
- 8 cups of sugar
- 4 cups white vinegar
- 2 cups water
- 8 - 2 inch cinnamon sticks
- 2 T. whole cloves
- 2 T. whole allspice
- (Combine spices and place in cheesecloth)
- Combine all ingredients in very large pot.
Squash Casserole (Chain Letter - Pam Shaw)

Bake at 350
- 1 & 1/2 lb. yellow squash, sliced
- 1 onion chopped
- 1 large carrot, peeled and sliced
- Cook the above 5 min. then drain.
- Mix together 1 stick margarine melted and 1 & 1/2 cups herb bread crumbs.
- Mix together 1 cup sour cream and 1 can cream of chicken soup. Mix well.
- Pat 1/2 bread crumb mixture into bottom of 9x13 greased dish. Place squash mixture on top of crumbs. Pour soup mixture over top of squash and cover with rest of bread crumb mixture. Bake at 350 for 35
Fresh Salsa

Mix all ingredients together
- 2-28 oz. cans of petite diced tomatoes
- 1/2 cup red onion, chopped
- 2 cans diced green chili's, diced
- 2 jalapeno's, diced and seeded
- 1/2 cup fresh cilantro, chopped
- salt and pepper
- dash of cumin - if you have it
- You can also use a can of washed black beans for extra color.
Sour Cream Pound Cake

Sift flour and soda. Set aside
- 2 *2 sticks of real butter
- 3 cups sugar
- 6 *6 eggs
- 1 cup sour cream - 8 oz.
- 3 cups flour (all-purpose)
- 1/4 tsp. baking soda
- 1 tsp. vanilla
- 1 tsp. almond
- *NEEDS TO BE AT ROOM TEMPERATURE
Vidalia Onion Cornbread

Preheat oven to 450 degrees
- 1/4 cup (1/2 stick) butter
- 1 large Vidalia or other sweet onion, chopped
- 1 (8 oz.) package cornbread/muffin mix
- 1 egg, beaten
- 1/3 cup whole mix
- 1 cup sour cream
- 1 cup grated sharp cheddar cheese, divided
- 1/4 t. salt
- 1/4 t. dried dill weed
Chile Cheesecake

Preheat oven to 325. In medium bowl, combine tortilla chips and butter
- 1 cup tortilla chips, crushed
- 3 T. butter, melted
- 2-8 oz. pkgs. cream cheese, soft
- 2 eggs
- 1-4 oz. can diced green chilies
- 1 fresh jalapeno pepper, cored, seeded, and diced
- 4 oz. colby cheese, shredded
- 4 oz. monterey jack cheese, shredded
- 1/4 cup sour cream
- 1/4 cup chopped tomatoes
- 1/4 cup chopped green onions
- 1/4 cup diced black olives
Brown Rice (Mom)

Pour into a greased casserole dish and bake at 350 for 1 hour
- 1 can french onion soup
- 1 can beef broth
- 1 can rice (not instant)
Spinach Casserole

Saute onion in 1 T. butter until soft and brown
- 2 small boxes frozen chopped spinach (follow pkg. directions for cooking and draining)
- 2 eggs, beaten
- 1 cup mayo
- 1 can cream of mushroom soup
- 1 small onion chopped finely
- salt and pepper to taste
- 1 cup grated swiss cheese
Crab Melts

Mix Above Ingrediants together and spread on english muffins
- 8 oz Crab Meat
- 1 Jar Old English Cheese Spread
- 1 stick of butter
- 1 1/2 t. Mayo
- 1/2 t. garlic powder
- 1 1/2 t. Seasoned Salt
Cheesy Corn Chowder

In a large saucepan, combine all ingredients
- 2 cans (17 oz. each) yellow cream style corn
- 1 can (10 3/4 oz.) cream of potato soup undiluted
- 1 can (10 3/4 oz.) cheddar cheese soup undiluted
- 1/2 cup real bacon pieces
- 2 cups milk
- 2 t. Dried chopped onion
- 1 t. Dried parsley flakes
- 1/4 t. Ground red pepper
