Ingredients
- 2 cups flour sifted
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 2 cups sugar
- 1 1/2 cup oil
- 4 eggs
- 8 oz crushed pineapple
- 1/2 c nuts
- 1 c coconut
- Carrots

Preparation
Step 1
Sift 1st five ingredients. Add sugar, oil, eggs and mix well. Blend in carrots, pineapple, nuts and coconut.
Bake in tube pan at 350 for 35 min.
Cream cheese frosting:
1/2 cup butter
8 oz cream cheese
1 lb confectioners sugar
1 tsp vanilla.
