Ingredients
- 1 eggplant, cubes 1 inch
- 1 cup celery
- 1/2 cup onion
- 1/4 cup vinegar
- 1 tablespoon sugar
- 1/4 teaspoon oregano
- 1/2 cup capers
- 3/4 cup whole stuffed olives
- Salt
- Pepper
- Small can tomato sauce
- 1/2 cup grated american cheese

Preparation
Step 1
Saute eggplant in oil and add celery, onion, vinegar, sugar, oregano, capers, olives, salt, pepper, and tomato sauce
Place in casserole dish top with cheese and broil until cheese is melted.
