Banana Bread Pudding

Ingredients

  • 4 c cubed day old French or sourdough bread
  • 1/4 c butter or margarine, melted
  • 3 eggs
  • 2 c milk
  • 1/2 c sugar
  • 2 t vanilla extract
  • 1/2 t cinnamon
  • 1/2 t nutmeg
  • 1/2 t salt
  • 1 c sliced firm banana (1/4" pieces)

Step 1

Place bread cubes in 2 quart casserole (greased), pour butter over and toss to coat. In medium bowl, lightly beat eggs and milk, sugar, vanilla, cinnamon, nutmeg & salt. Stir in bananas. Pour over bread and stir to coat. Bake @ 375 for 40 minutes or until center is done.

For sauce, melt butter in saucepan; combine sugar & cornstarch; add to butter. Stir in milk and corn syrup. Cook and stir over medium until boiling. Remove from heat. Stir in vanilla. Serve warm sauce over warm pudding.

*Cut recipe in half for 4 people.
