Steamed Artichokes With Red Wine Aioli

Ingredients

  • 11/2 C. Dry Red Wine
  • 4 Garlic Cloves, 3 Halved, 1 Minced
  • 1/2 C. Low-Fat Mayonnaise
  • 1/2 C. Low-Fat Yogurt
  • 1/4 tsp. Ground Cumin
  • Pinch of Cayenne Pepper
  • Salt & Freshly Ground Black Pepper
  • 4 Lg. Artichokes, Stems Trimmed

Preparation

Step 1

In a med. saucepan, boil the wine & halved garlic cloves till reduced to 1/4 C, about 8 min. Transfer to a med. bowl & mash the garlic with a fork. Let cool to room temp. Stir in the mayonnaise, yogurt, minced garlic, cumin, cayenne pepper, salt & freshly ground black pepper. Cover & refrigerate for at least 1 hr. Meanwhile, put the artichokes in a steamer basket, cover & steam over moderate heat till the bottoms are tender, about 40 min. Let cool. Transfer artichokes to a platter & serve with red wine aioli.
