SHRIMP PASTA PIE

Ingredients

  • 8 oz. uncooked thin spaghetti, cooked and drained
  • 4 Tblsp. butter
  • 3 eggs
  • 1/4 tsp. black pepper
  • 2 oz. fresh Parmesan cheese, grated ( 1/2 cup)
  • 1 garlic clove, pressed
  • 1 1/2 cups small broccoli florets
  • 1/2 cup red bell pepper, chopped
  • 1/3 cup sliced green onion with tops
  • 8 oz. uncooked, medium fresh shrimp, peeled and deveined
  • 1 container (10 oz.) refridgerated Alfredo pasta sauce
  • 2 oz. shredded mozzarella cheese (1/2 cup)

Step 1

Preheat oven to 350.
Spray deep dish pie pan with vegeatble oil.
Cook spaghetti according to package directions.
Drain spaghetti, rinse and transfer to large bowl.
Add 3 Tblsp. butter that you cut into small pieces and stir until melted.
Add eggs and black pepper.
Grate parmesan cheese over pasta and mix well.
Spoon into prepared pie pan.
Spread mixture evenly, forming a 1 inch rim around edge to make a shell.
Bake 10 to 12 minutes or until set.

Melt remaining 1 Tblsp. butter in skillet over medium high heat.
Press garlic into skillet.
Add vegetables and shrimp.
Stir fry 4 minutes, or until shrimp is opaque.
Remove skillet from heat.
Stir in 1/2 cup of the pasta sauce.
Spoon mixture into pasta shell.
Shred mozzarella cheese over shrimp mixture.
Bake 10 minutes.
Let stand 5 minutes.
Cut into wedges.
Heat remaining sauce in microwave for 2 minutes stirring every minute.
Serve over pasta.
