sweet corn quesadillas

Ingredients

• 3 cups fresh corn
• 1/2 cup chopped red bell pepper
• 1/2 cup chopped scallion
• 2 tbsp chopped cilantro
• 2 tbsp lime juice
• 1/4 tsp chili powder
• large flour tortillas
• 2 cups shredded monterey jack

Preparation

Step 1

Combine all ingredients except tortillas. Place tortilla in skleet over medium heat & spread 1/2 cup mixture over half & melt cheese; fold over.
