- 8 eggs
- 3 3/4 cups granulated sugar1 1/2 cups vegetable oil
- 1 teaspoon salt
- 2 cups all purpose flour
- 1 cup unsweetened cocoaa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 4 cups grated carrots
- Frosting:
- 1 pound white chocolate, melted and cooled
- 1 pound powdered sugar
- 1 cup butter
- 2 cups cream cheese
- 2 teaspoons vanilla extract

Preparation
Step 1
Whip eggs adn sugar on high speed until pale yellow and tripled in volume. Gradually add oil with mixer running. Sift together dry ingredients, add to egg mixture. Fold in Carrots Pour into 2 (10 inch) cake pans. Bkae at 350 degrees for 1 hours.
*frosting
Cream butter and sugar. Add cream cheese a little at at time. Mix in vanilla and white chocolate.
