Ingredients
- 1 1/2 Pound of Ground Beef
- 3/4 C of Onion, Chopped
- 1 Can of Delmonte Zesty tomatoes with Jalepenos
- 1 Can of Ranch Style Beans
- 1 C of Minute Rice
- 3 Tbsp. Green Pepper, Chopped
- 1 Tsp. Chili Powder
- 1 Tsp. Cumin
- 1/2 Tsp Garlic Salt
- 3/4 C Pepper Jack Cheese, Shredded
- 1/2 C Water
- 1/2 Tsp Salt
- 1 Small Bag of Fritos
- 1/2 C of Salsa, Optional

Step 1
In a skillet cook ground beef and onion until the beef is brown and onion is tender. Drain fat and add undrained tomatoes, undrained beans, uncooked rice, green pepper, garlic salt, 1/2 cup of water, and 1/2 teaspoon of salt. Bring to a boil, reduce the heat and let simmer for 20 minutes. Top with cheese and cook about 3 minutes until cheese melts. Place crushed Fritos on top. For more flavor you can add salsa before you add the cheese.
