FRENCH ONION SOUP

Ingredients
- 4 onions, sliced
- 2 tablespoons butter
- 1 can (10-oz) beef broth
- 11/2 cups water
- 1 oxo beef cube
- 1 bay leaf
- 1/8 teaspoon dried thyme leaves
- 1/8 teaspono pepper
- 4 slices French bread cut 1-inch thick
- 1 cup grated Mozzarella cheese

Preparation
Step 1
In a large saucepan over low heat, melt butter.
Add onion.
Cover, stirring occasionally and cook until tender (about 25 minutes).
Add beef broth, water, oxo, bay leaf, thyme and pepper.
Heat to boiling.
Reduce heat and simmer, covered, for 15 minutes.
Broil bread slices until golden.
Pour soup into four ovenproof bowls.
Top with bread slices.
Sprinkle mozzarella on bread.
Broil until cheese is melted and golden brown.
