Ingredients

  • Crumb topping:
  • 1 1/2 cups flour
  • 2 Tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup fat free milk
  • 1 cup chopped peeled tart apple
  • 1/2 cup sugar
  • 1 tsp. ground cinnamon
  • 1 egg
  • 1/4 cup canola oil
  • 1/4 cup raisins
  • 2 Tbsp. flour
  • 2 Tbsp. brown sugar
  • 1 Tbsp. cold butter
  • 2 Tbsp. quick cooking oats
  • 1 tsp. ground cinnamon

Step 1

In a bowl, combine flour, sugar, baking powder, cinnamon and salt. Combine egg, milk, and oil. Stir into dry ingredients just until moistened. Fold in the apple and raisins. Coat muffin cups with nonstick cooking spray or use paper liners. Fill 2/3 full.
For topping, in a bowl, combine flour, oats, brown sugar, and cinnamon, cut in butter until crumbly. Sprinkle over batter. Bake 375 for 20 minutes or until toothpick comes out clean. Cool 5 minutes before removing from pan to wire rack. Serve warm
