Cauliflower Rice

I made this February 2014 and it was great! I topped it with chili. I thought it was delicious, even plain. I had some leftover and used it for another meal to put on top of a salad and that was really good too. This is a great way to get more veggies in your diet and replace starchy rice. I will definitely make this again and again as a replacement for rice.

    head of cauliflower, washed and cut into chunks

Directions

Put chunks of cauliflower into food processor and pulse until cauliflower has consistency of rice. Put water in pot, about one inch high (I add salt to the water), and bring to a boil. Add cauliflower rice to pot and put on lid. Boil for 5 minutes. Drain water.
