- whole beef tenderloin

Preparation
Step 1
preheat oven to 450 degrees
rub meat with oil, crushed garlic, salt and pepper
Roast 1/2 hour for medium rare
cover and let stand for up to 4 hours
slice and serve
(can put on a bed of arugula)
