Ingredients
- 2 eggs beaten
- 1 cup freshly grated parm
- 7 oz seasoned bread crumbs (approx 3/4 cup - i use Progresso Italian style bread crumbs)
- 6 boneless skinless chicken breast halves
- 1 TBS veg oil
- 12 oz pasta sauce (if using jar, barilla baking marinara is preferred!)
- 6 slices monterey jack cheese (i use a block and grate) or can use mozz cheese - freshly grated stella mozz is good!)

Preparation
Step 1
1) Preheat oven to 375
2) Pour beaten eggs into shallow dish or bowl.
In another shllow dish or bowl, mix together grated parm and bread crumbs. Dip chicken into beaten egg then into bread crumb mixture to coat.
3) In large skillet, heat oil over medium high heat. Add coated chicken and saute 8-10 in ea side or until chicken is cooked thru & juices run clear (most thin slices are 5 min ea side).
4) Pour tomato sauce into a lightly greased 9x13 baking dish. Add chicken, then place a slice of mont jack cheese (or sprinkle shredded cheese) over each breast.
5) Bake 20 min or until cheese melts.
