  • Frosting:
  • 3 c. flour
  • 1 c. sugar
  • 1 1/2 tbsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. ground ginger
  • 1 1/2 c. unsweetened chunky applesauce
  • 1 1/4 c. vegetable oil
  • 1 c. brown sugar
  • 1 tbsp. vanilla
  • 4 eggs
  • 2 c. shredded carrot (about 4 medium)
  • 1 c. chopped walnuts
  • 8 oz. cream cheese
  • 6 tbsp. softened butter
  • 1 tsp. vanilla
  • 1 1/2 c. icing sugar

Step 1

Preheat oven to 350 degrees.
In a large bowl, mix flour, sugar, cinnamon, nutmeg, baking soda, baking powder, salt and ginger.
In a medium bowl with a wire whisk or fork, beat applesauce, vegetable oil, brown sugar, vanilla and eggs until smooth. Stir applesauce mixture, shredded carrots and walnuts into flour mixture, just until flour is moistened.
Pour batter into a greased 10" springform pan and bake for 65 to 70 minutes, or until a toothpick comes out clean.
Cover the top of the cake with foil if it browns too quickly.
Cool cake in pan on a wire rack 10 minutes; remove sides of pan and cool completely on rack. When cake is cool, remove bottom of pan, and place cake on a serving plate. Frost with cream cheese frosting.

Cream Cheese Frosting: In a large bowl, with mixer at medium speed, beat cream cheese, butter and vanilla until blended. Gradually beat in icing sugar until smooth.
