Baby Potatoes In Fresh Cream With Basil

Ingredients
- 1 lb. Baby Potatoes, cut into quarters
- 1 C. Heavy Whipping Cream
- 2 tsp. Fresh Basil, chopped
- Salt to Taste
- Fresh Cracked Pepper to Taste

Preparation
Step 1
Boil the cleaned & cut potatoes till firm but not mushy, about 15 min. Drain well when they are done & set aside. In a sm. saucepan, gently heat the cream & basil. Stir the mixture constantly so that the cream will not burn. When bubbles appear, reduce the heat of the cream mixture. Add the salt & pepper to taste. Toss the potatoes gently in the cream mixture till evenly coated.
