French Onion Soup

Ingredients
- 4 large onions
- 1/4 cup of Extra Virgin Olive Oil
- 1/2 cup of Brandy
- Tsp of sugar
- 2 quarts of beef broth
- Baguette
- Gruyere cheese, shredded
- 8 slices of Swiss cheese

Preparation
Step 1
Slice the onions thinly
Coat bottom of dutch oven with olive oil.
Add onions and cook over medium heat for 12 minutes, til tender and golden. Stir often.
Add brandy and let alcohol cook off
Add sugar
Add beef broth. Cover and bring to a boil. Reduce heat and simmer for 12 minutes.
Ladle soup into oven-proof bowls, place a toasted baguette on top.
Cover with shredded Gruyere then a slice of Swiss cheese.
Place bowls on baking sheet and broil until cheese is melted.
