    medium onion, chopped

    large egg

    tsp dried thyme leaves

    tbsp honey mustard, divided

  • tsps worcestershire sauce

    pounds ground turkey (85% lean)

    cup low-fat Greek-style yogurt

  • ½

    cup crushed saltine crackers (about 10)

    thin slices prosciutto (3 ounces)


Put oven rack in middle position;heat oven to 450. Heat oil in a medium skillet over medium-high heat. Add onions;saute until lightly brown, 4 to 5 minutes. Add garlic;saute a minute longer;set aside. Mix egg with thyme, salt, 1 tbsp mustard and the worcestershire. Place turkey in a medium bowl;add yogurt, crackers and onion;mix with a fork until evenly blended. Add egg mixture;blend well. Turn meat once onto a work surface. With wet hands, divide and form into 6 loaves;brush with remaining mustard. Wrap a prosciutto slice around each loaf. Place on a grid-style wire rack set over a foil-lined rimmed baking sheet. Bake until golden, about 25 minutes. Remove from oven;let rest for a few minutes and serve.
