lbs. sweet potatoes, peeled and quartered
1½ to 2
cups sugar, depending on the sweetness of the potatoes
1. Place the potatoes and sugar in a large pot and add water to cover. Bring to a boil, reduce the heat, and simmer until tender. 2. Using a slotted spoon, remove the potatoes and place them in a serving bowl. 3. Dot with butter and serve immediately.
