Ingredients

  • Dressing:
  • 1 head bok choy
  • 1/2 cup unsalted sunflower seeds
  • 1 pkg Ramen noodles ( i use a few) doesnt matter the flavor of the soup.
  • 4 scallions
  • 3/4 slivered almonds toasted
  • 3/4 cup olive oil
  • 1/2 cup sugar (I used natural stevia from Whole Foods or Splenda)
  • 1/3 cup white wine vinegar
  • 3 tbs soy
  • Red peppers chopped
  • Craisins
  • I double recipe typically for a crowd.

Preparation

Step 1

Let sugar dissolve, add vinegar and soy. Let sit 1 hour, toss before serving. ( I have made Dressing in advance and let sit out of fridge for days)
