Cauliflower & Mushrooms in Cheese Sauce

Ingredients

  • 1 - 1 1/2 heads cauliflower
  • 1 1/2 c. sliced mushrooms
  • 4 tbsp. butter
  • 3 tbsp. flour
  • 1 1/2 c. milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. dry mustard
  • 1 1/2 - 2 c. shredded cheddar cheese
  • Parmesan Cheese

Preparation

Step 1

Preheat oven to 375 degrees.
Cook cauliflower; drain; rinse in cold water; set aside.
In a skillet, saute mushrooms in 1 tbsp. of butter for 2 to 3 minutes, or until soft.
In a large saucepan, melt remaining butter over medium heat. Stir in flour and cook for 1 minute. Whisk in milk; continue to cook until mixture boils, stirring constantly. Stir in salt, pepper, mustard and cheese. Cook until cheese melts and sauce is smooth.
Remove from heat; stir in mushrooms and cauliflower. Mix well.
Turn into a 2 quart greased casserole. Mixture can be refrigerated overnight at this point and finished before cooking.
Sprinkle top with Parmesan cheese. Bake for 30 to 45 minutes.
