Stir Fried Pork and Noodles

Ingredients

  • 2 packages Ichiban soup mix (pork or chicken)
  • boiling water
  • 1 lb. pork tenderloin
  • 250 g. snow peas, trimmed
  • 2 green onions
  • 1 small sweet red pepper
  • 1 T oil
  • 1 T cornstarch
  • 2 T light soy sauce
  • 2 tsp. sugar
  • 1/2 tsp. ground ginger
  • pinch crushed red pepper
  • 1 clove garlic, crushed

Preparation

Step 1

Place noodles in bowl and cover with boiling water. Let stand until soft, stirring occasionally. Mix 1 C boiling water with 1 seasoning packet from noodles and set aside to cool.

Cut pork into 1/4" slices. Remove strings from pea pods. Cut onion into slices. Julienne pepper.

In large wok, heat oil over high heat. Add meat, stirring until well browned, approximately 10 minutes. Meanwhile, stir cornstarch, soy sauce, sugar, ginger, and crushed red pepper into seasoned water.

Reduce heat to medium. Add onion and garlic to pork, cook one minute. Add peas and peppers. Cook until tender-crisp. Stir in seasoned water mixture. Heat to boiling, stirring constantly. Drain noodles and add to skillet. Toss and serve.
