Shrimp Fra Diavolo

Ingredients

  • 1 lb linguine
  • 6 T. olive oil
  • 1 cup diced onion
  • 1/2 cup diced red pepper
  • 3 T. minced garlic
  • 1/4-1/2 cup sun dried tomatoes
  • 2-3 tsp. crushed red pepper flakes
  • 1 1/2 cups canned tomato sauce
  • 2 T. tomato paste
  • 1 1/2 lb shrimp, peeled and deveined with tails removed
  • 1 tsp. salt plus more for pasta water
  • 1/2 cup Parmesan cheese

Preparation

Step 1

Bring salted water to a boil and place the pasta in the pot. Cook as indicated on package directions.

Add olive oil to saute pan and once oil is hot, add the onions and red pepper to the pan and cook until lightly caramelized and wilted, about 3-4 minutes. Add the garlic to the pan and saute about 30 seconds. Add the red pepper flakes and saute briefly before adding the tomato sauce,tomato paste and sun dried tomatoes. Cook the sauce until reduced by about half, about 5 minutes. Add the shrimp to the pan and cook for 2 minutes. Add the shrimp to the pan and cook for 2 minutes. Add the cooked pasta to the pan and continue to cook together for a couple of minutes. Add pasta water if sauce is too thick.

Season the pasta with salt and serve with Parmesan cheese.
