Ingredients

  • 3 tbsp plus 1 tsp olive oil
  • 2 lbs pizza dough
  • 2 large red onions, thinly sliced
  • salt and pepper
  • 1 tbsp cider vinegar
  • 1/2 cup grated pecorino
  • 1 tsp red pepper flakes

Step 1

Preheat oven to 425. Coat an 11 by 17 inch sheet with 2 tbsp oil. Place dough on sheet, stretching to fit. Drizzle edges with 1 tbsp oil. Cover with plastic wrap and sit 15 minutes.
In a large skillet, heat 1 tsp oil over medium high. Add onions and season with salt and pepper. Cook, stirring, until tender and golden, 12 minutes. Add vinegar and cook, stirring, 1 minute.
Uncover dough. With fingertips, poke dimples all over, then top with cheese, onions, and red pepper flakes. Bake until golden, 30 minutes. Let cool on sheet 5 minutes. Cut into pieces and serve.
