Cider Baked Turkey Breast

Ingredients
- 1 Turkey breast (about 2 1/2 lbs)
- 1 Cup unsweetened cider or apple juice
- 2 Tbsp soy sauce
- 1 Tbsp cornstarch

Preparation
Step 1
Pre-heat oven to 450
Bake turkey breast, skin side up, uncovered, for 20-25 minutes, until skin is crisp
Drain and discard any fat
Combine 3/4 cup cider with soy sauce and pour over turkey
Lower heat to 350
Cover and bake 1 hour or more, basting frequently with pan liquid until turkey is tender
Skim fat from pan liquid
Combine cornstarch with remaining 1/4 cup cider, stir into pan
Continue to bake until sauce thickens
Slice turkey and spoon on sauce
