Apple Harvest Cake

I came across this cake on Taste Of Home, and since I love all things apple and cinnamon it was bookmarked right away. I made it yesterday as a dessert for a very simple dinner. I had the pleasure of having a piece of this for breakfast this morning. I loved it! Comfort food at it's best.


The first thing that came to mind was how moist it was, this is chock full of apples, the cinnamon - sugar ribbon that flows through the center of the cake gives this just the right amount of sweetness, not overly sweet but just right. I had it plain , right out of the pan and I was delighted with it! You could adorn this with a drizzle of glaze if you wanted to but it doesn't need it. It's the perfect coffee cake. I put a little bit of whipped cream on the top with a sprinkle of cinnamon. I'm thinking about the Edy's Apple Pie Ice Cream in the freezer with this cake....a match made in heaven. Ingredients

  • 2-1/4 cups sugar, divided
  • 1 cup vegetable oil
  • 4 eggs
  • 1/4 cup orange juice
  • 2-1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 medium tart apples, peeled and cubed
  • 2 teaspoons ground cinnamon
  • Whipped cream and additional cinnamon, optional

Directions:

In a large mixing bowl, beat 2 cups sugar, oil, eggs, orange juice and vanilla until well blended. Combine the flour, baking powder and salt; gradually beat into sugar mixture until blended. Stir in apples. Spread half of the batter into a greased 13-in. x 9-in. baking dish. Combine cinnamon and remaining sugar; sprinkle over batter. Carefully spread remaining batter over the top. Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Garnish with whipped cream and additional cinnamon if desired. Yield: 12-15 servings.
